FREEZER MASHED POTATOES

Can you freeze mashed potatoes? You bet you can! I always make these potatoes and give them to my kids when they go away to school. All they have to do is keep it in freezer until it's mashed potato time! -Jessie Fortune, Pocahontas, Arkansas

Freezer Mashed Potatoes image

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash potatoes with butter. Beat in the sour cream, cream cheese, onion powder, salt and pepper. Transfer 1-1/2 cups to a 2-cup baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until heated through. , Cool remaining mashed potatoes. Freeze in 1-1/2-cup portions for up to 6 months., To use frozen potatoes: Thaw in the refrigerator. Bake as directed.

Can't remember where I got this recipe but it's always a good one. You can use fresh, leftover, or instant for this this recipe. Cooking time below is for fresh potatoes.

Steps:

  • Mix all ingredients together well.
  • Spray 9x11-inch baking dish with non stick cooking spray.
  • Pour potato mixture into dish.
  • Dot with small amounts of butter.
  • Bake at 350°F for 25 minutes or till hot.
  • If desired, sprinkle extra cheese over the top and top with extra green onion.

4 cups hot seasoned mashed potatoes
1 cup sour cream
1/2 cup green onion, chopped
4 ounces sharp cheddar cheese, grated
1 teaspoon garlic powder (optional)

Steps:

  • Peel and quarter potatoes, cover with water, bring to a boil and cook until tender, about 20 minutes.
  • Drain and mash, add the butter and gradually add milk.
  • Mash until smooth and stir in salt.
  • Place mashed potatoes in a greased shallow casserole dish and cover to keep warm.
  • Preheat oven to 450°.
  • Whip heavy cream until stiff, then fold in gruyere cheese and 3 tablespoons of the Parmesan cheese.
  • Spread cream mixture over top of potatoes and sprinkle remaining Parmesan over it.
  • Bake for 12 to 15 minutes or until top is well browned.
  • Serve immediately.

Steps:

  • Preheat the oven to 350 degrees, and greased a baking dish.
  • Peel the film at the corner of the Simply Potatoes package to vent and heat on high for 3 minutes in the microwave. Carefully remove the film (be careful not to burn yourself with steam) and stir. Microwave on high for 1 more minute.
  • In a large bowl, mix the potatoes, goat cheese, cream cheese, and butter. Stir together until well-blended.
  • Carefully stir in the crumbled bacon, bell pepper, green onions, and pepper. Taste at this point and see if you want to add the salt. Stir in 1/3 cup of the cheddar and parmesan cheese until well combined.
  • Transfer to a prepared baking dish and sprinkle with the remaining cheese.
  • Bake, uncovered, for 20 to 25 minutes or until heated through.
