GRAPE JUICE TAPIOCA PUDDING
This is a 1970 grape juice desert, from an old Indiana Church cook book. Good to serve anytime. Great with whipped cream on top!

Steps:
- 1. Put 2 cups of grape and 2 cups of water into a 4 qt. saucepan, add tapicoa and heat on medium heat, stirring constantly..When mixture starts to bubble, add remaining grape juice, and stir constantly, adding sugar, and vanilla.Cook till heated. Remove from heat, and let cool. The pudding will thicken as it cools. Great served with a dollop of whipped cream.
- 2. I have concord grapes on my back fence, and have canned and frozen many quarts of juice. I make grape jelly when ever I run low. A real treat. If you were here I would share some with you. Better than store bought!
CONCORD GRAPE TAPIOCA PUDDING
Steps:
- Combine all of the ingredients in a large saucepan and mix well. Cook over medium heat, stirring constantly, until the mixture comes to a boil, about 15 minutes. Remove from the heat and let cool at room temperature for 20 minutes, stirring once. Spoon into individual dishes and chill in the refrigerator until the tapioca sets, about 45 minutes.
- Top with whipped cream, and serve.
SLOW COOKER TAPIOCA PUDDING
Classic tapioca pudding is made with very little hassle in a slow cooker. There is no need to presoak small tapioca pearls prior to cooking.

- Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
- Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.

TAPIOCA PUDDING PARFAITS
Creamy pudding is layered with fruit preserves, caramel sauce or chocolate sauce and topped with nuts, chocolate pieces or spices. Steps:
- Fill a large bowl with ice water and set aside.
- Mix the sugar, tapioca, milk and egg yolks together in a medium saucepan.
- Cook on medium-high heat, stirring constantly, until mixture comes to a full boil.
- Remove from heat, transfer the pudding to a medium bowl, and set in the ice bath.
- Chill for at least 1 hour or until pudding cools completely.
- To prepare the parfaits: place 3 tablespoons tapioca in a small parfait glass.
- Spread one tablespoon of sauce or preserves over the tapioca.
- Top with 3 more tablespoons tapioca and 1 more tablespoon sauce or preserves.
- Finish with a final layer of 2 tablespoons tapioca.
- Repeat with 5 more parfait dishes and garnish with nuts, candies, chocolate pieces, or a sprinkle of cinnamon, if desired.

- In a medium saucepan, lightly beat egg. Add coconut milk, milk, sugar, and tapioca; whisk to combine. Set aside, at least 5 minutes, until tapioca is slightly softened.
- Stirring constantly, bring mixture to a boil over medium heat; stir in vanilla. Transfer mixture to a bowl; cover with plastic wrap. Let cool until no longer hot, about 30 minutes. Refrigerate until cold, 2 to 3 hours (or up to 3 days).
