MY FAVORITE CORN CHIP TAMALE CASSEROLE

I know there are a lot of Frito Casserole recipes out there, but this version is my favorite! Everyone from kids to adults seem to enjoy it, and it is sooo easy!

My Favorite Corn Chip Tamale Casserole image

Steps:

  • 1. Remove paper from tamales and place in small baking dish, along with liquid from can. Slice each tamale into 3 - 4 pieces. Sprinkle with half of the chopped green onion.
  • 2. Spread chili with beans over the tamales. Sprinkle with rest of green onions. Sprinkle with plenty of cheese!
  • 3. Put corn chips in a baggie, and with hands or rolling pin, crush and spread over cheese to cover. *You can put the cheese on top of the corn chips, but I like the cheese to melt directly onto the beans.
  • 4. Bake at 350 degrees for 25 minutes, or until heated through. Serve with condiments of your choice - I use sour cream and taco sauce. A great quick and tasty meal!

1 can(s) tamales (prefer hormel's)
1 can(s) chili with beans (prefer dennison's)
1 - 2 green onions, white and green parts - finely sliced
1 - 2 c grated cheddar cheese (i use mild)
1 to 1 1/2 c corn chips (such as fritos)

NOT-SO-CORNY TAMALE PIE

Looking for a tamale pie, but not crazy about all that corn? This dish doesn't have bits of corn, it is a nice meat-and-beans dish.

Not-So-Corny Tamale Pie image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat oil in a cast-iron skillet over medium-high heat; saute onion until lightly browned, 5 to 10 minutes. Add ground beef; cook and stir until beef is browned and crumbly, 5 to 10 minutes. Mix pinto beans and black beans into beef mixture.
  • Sprinkle Mexican cheese blend over beef-bean mixture; stir. Mix diced tomatoes with green chile peppers into beef-bean mixture.
  • Mix corn bread mix, milk, and eggs together in a bowl until batter is smooth. Spread batter over top of beef-bean mixture.
  • Bake in the preheated oven until a toothpick inserted in the center of the cornbread comes out clean, 15 to 20 minutes.

Old-School Tamale Pie image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
  • Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
  • Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

  • Combine the beef, sausage, onion and garlic in a 3-qt. microwave-safe dish. Cover and microwave on high for 4-5 minutes, stirring once to crumble meat. Drain. Add the tomatoes, corn, tomato paste, olives, chili powder and salt; mix well. Cover and microwave on high for 4-6 minutes or until heated through., Whisk egg in a large bowl; add milk and cornbread mix. Stir just until moistened.   • Drain corn, reserving liquid; set corn aside. Place masa harina in a large bowl. In a small bowl, combine the broth, butter, egg and reserved corn liquid; stir into masa harina just until moistened. Set aside., In a large skillet coated with cooking spray, cook pork and onion over medium heat until pork is no longer pink. Layered Tamale Pie image

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in large skillet and add onions; cook until tender, but not brown.
  • Add beef, brown well and Drain.
  • Mix in the Taco Seasoning and 3/4 Cup water; let simmer for 5 minutes, uncovered, stirring frequently, until spice mixture is no longer runny.
  • Stir crushed tomatoes, corn, and cornmeal into the meat; mix well.
  • In an 9X9 round pyrex (or well greased metal) baking dish, place 4 of the 8 tortillas on the bottom, spread out, to cover the pan, add 1/2 of the meat mixture over the tortillas,and then 1/2 of the cheese.
  • Repeat this layering process, ending in cheese.
  • Place in oven to heat through, and melt cheese (about 25 minutes).
  • Cut into 8 pieces across, as you would a pie.
  • Serve!
