Macaroni and Corned Beef Casserole image

Steps:

  • Mix together all ingredients except for the crumbs. Put into a greased 1 1/2 QT casserole dish. Top with the buttered crumbs and bake at 350*F for 35 to 40 minutes until bubbly and lightly browned.

1 (12 ounce) can corned beef, crumbled
1 cup macaroni (cooked and drained)
1/4 lb cheddar cheese, grated
1 cup milk
1 (10 1/4 ounce) can condensed cream of chicken soup
1/2 cup minced onion
3/4 cup buttered bread or 3/4 cup cracker crumb

This is a different twist to macaroni salad that is delicious and a smart way to use up that left-over corned beef from St Patrick's Day.

Corned Beef and Macaroni Salad image

Steps:

  • 1. Cut beef into small cubes.
  • 2. Cook macaroni in boiling salted water for about 20 minutes. Drain and rinse with cold water.
  • 3. In a medium size bowl combine mayonnaise, relish, beef, vegetables, and salt and pepper. Chill and serve.

1 1/2 c corned beef
2 c elbow macaroni, cooked
1/2 c celery, chopped
1/4 c sweet relish
1 tsp sugar
1/2 c mayonnaise
1/4 c red bell pepper, chopped
1/4 c green bell pepper, chopped
salt and pepper, to taste
1/8 c onions, chopped (optional)
