BACON BREAKFAST COOKIES

I tried this breakfast cookie recipe when I was a 4-H leader. Chock-full of bacon, cornflakes and raisins, they're a handy breakfast on the go. -Louise Gangwish, Shelton, Nebraska

Bacon Breakfast Cookies image

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg. Combine flour and baking soda; gradually add to creamed mixture. Stir in bacon, cornflakes and raisins. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. Store in the refrigerator.

Cornflake-Coated Crispy Bacon image

Steps:

  • Preheat oven to 375°. In a large bowl, combine milk, ketchup, Worcestershire sauce and pepper. Add bacon strips, turning to coat. Dip strips in crushed cornflakes, patting to help coating adhere. Place bacon on 2 racks; place each rack on an ungreased 15x10x1-in. baking pan. Bake until golden and crisp, rotating pans halfway through baking, 25-30 minutes.

BREAKFAST COOKIES WITH BACON

I as at the General's house for a brunch and these were so good I had to ask for the recipe! They're sweet and salty - a favorite combination of mine. My son asked me to make them the other day and I searched and couldn't find anything like them so figured I'd post it to keep the recipe alive. Hope you enjoy!

Breakfast Cookies With Bacon image

Steps:

  • cook bacon till crisp - then break into small pieces.
  • Beat together butter and sugar till fluffy, beat in egg, combine dry ingredients and mix into butter mixture.
  • Add bacon, corn flakes, and raisins and stir in by hand.
  • Drop by teaspoonful onto UNgreased cookie sheet 2" apart.
  • Bake 350 for 15 minutes. Cool 1 minutes, move to rack.

This wonderful recipe was in circulation when I was a kid in the 70s. Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)!
