CORNFLAKE MOZZARELLA STICKS

Steps:
- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper. While the cornflakes are still in the bag, smash them with a pan or measuring cup until they are the consistency of breadcrumbs. Set up a breading station: put the flour in one bowl and season with the salt and pepper; put the eggs in another. Put the bag of cereal crumbs on the side.
- Cut the string cheese in half crosswise so they are the length of regular mozzarella sticks. Dip each piece in the flour to coat, shake off the excess, drop in the eggs and then drop in the bag of cornflake crumbs and shake to coat. Drop the coated cheese back in the egg and then cover with another layer of cornflakes. Place on the prepared baking sheet. Bake the sticks until the cheese melts, 5 to 7 minutes.
CORN FLAKE CHICKEN
Wanting a great tasting crunchy oven baked healthy chicken, I came up with this recipe. I suppose there is a few calories in it, but the taste is out of this world! Very easy also. You may add herbs of your chosing, I enjoy the garlic-onion flavor.

Steps:
- Crush the flakes in a large zip lock, or similar bag, using a rolling pin.
- Add all the seasonings.
- In a bowl, mix chicken with oil.
- Line a baking sheet with parchment paper.
- Place the chicken, 1 piece at a time in the bag and shake. Repeat with the other pieces, place on baking sheet. You may wish to "pat" extra flakes on top, once on the baking sheet.
- Also, if you like, a sprinkle of fresh parmesan on each.
- Bake 35-40 minutes at 350 degrees, or until juices run clear.
- The bottom may remain soggy, you may choose to turn over halfway through baking. Only the oil is holding the cornflakes on, so they may come off during this process. I don't mind the underside less crunchy!

Steps:
- Combine garlic powder and cayenne in a small bowl. Sprinkle on both sides of the chicken tenders. Season with salt and pepper.
- Dredge chicken in flour, then in egg substitute, allowing excess to drip off.
- Press strips into cornflakes on both sides.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Preheat the oven to 325 degrees F (165 degrees C).
- Brown chicken strips in the hot oil on both sides, working in batches if needed, 3 to 5 minutes. Place browned strips on a cookie sheet with a grate.
- Bake chicken in the preheated oven until no longer pink in the centers and juices run clear, 5 to 10 minutes, depending on their size.

CORN FLAKE DRUMSTICKS BAKE
This recipe has been passed around my family and it is quick and easy. It tastes like true Southern fried chicken.

Steps:
- Preheat oven to 350°F.
- Line a shallow roasting pan with aluminum foil.
- Spray with cooking oil spray.
- In a large bowl, mix corn flake crumbs, salt, parmesan cheese, black and cayenne pepper and mix well.
- Lightly beat eggs in a bowl.
- Dip each drumstick in egg and roll in corn flake mixture coating well.
- Place each drumstick on the roasting pan.
- Spray a light coating of cooking spray over the drumsticks.
- Bake at 350°F for 1 hour to 1 hour & 10 minutes.
CORNFLAKE GARLIC STICKS
This was on the side of our cornflakes box and I thought I would share. It's easy and quick to make and would be fun for the kids to help with.

Steps:
- Crush cornflakes by putting in plastic zip lock bag and rolling over it with a rolling pin or pound with meat tenderizer(or other fairly heavy object) to crush but not to powder.
- Cut each biscuit in half.
- Roll into sticks 5"-6" long.
- Dip each stick into milk. Roll in crushed cornflakes.
- Sprinkle with garlic salt.
- Place on buttered baking sheet 1" apart.
- Bake in a 450*F. oven for 7-10 minutes.
