Calico Soup Mix image

Steps:

  • In a large bowl, combine beans; divide into six batches (2 cups each). Store in airtight containers. Yield: 6 batches (12 cups total)., To prepare soup: Place one batch of bean mix in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. , Drain. Add 2-1/4 qts. water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Add ham, tomatoes, onion, green pepper, garlic and seasonings; return to boil. Reduce heat; simmer for 45-50 minutes.

Steps:

  • Sort beans, peas and lentils; combine in a large bowl. Divide into four equal batches, 2 cups each. Store in airtight containers in a cool, dry place for up to 6 months. Yield: 4 batches., To make one batch of soup: Rinse bean mixture with cold water. Place in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let soak for 1-4 hours or until beans are softened., Drain and rinse bean mixture, discarding liquid. Return bean mixture to pan; add remaining ingredients. Bring to a boil over medium-high heat. Reduce heat; cover and simmer for 3 hours or until beans are tender. Remove ham hock; cut meat into bite-size pieces and return to pan. Heat through.

Slow-Cooker Cordon Bleu Soup image

Steps:

  • For croutons, preheat oven to 375°. In a large bowl, mix melted butter, garlic powder and pepper. Add bread cubes; toss to coat. Transfer croutons to a 15x10x1-in. baking pan; bake, stirring every 5 minutes, until golden brown, 15-20 minutes. Cool in pan on a wire rack., Meanwhile, in a 4- or 5-qt. slow cooker, combine the first 5 soup ingredients; pour in broth. Cook, covered, on low about 2 hours or until vegetables are tender., Increase slow-cooker heat setting to high. Mix flour and water until smooth; whisk flour mixture into broth. Cook until thickened, 30-40 minutes. Stir in wine. Whisk in cheeses until melted. Add chicken and ham; heat through. Serve with croutons., Freeze option: Before adding croutons, freeze cooled soup in freezer containers. Freeze croutons separately. To use, partially thaw soup in refrigerator overnight. CALICO BEANS

Calico beans (aka cowboy beans or trucker beans) get their name from the variety of bean colors in the dish. Here we use a trio of canned beans: white navy beans, deep red kidney beans and light brown pork and beans. They're baked with bacon and ground beef in a tangy-sweet sauce until bubbling, resulting in the perfect summer side dish to accompany grilled meats. Calico beans are also great on their own as a main course, topped with shredded cheese and hot sauce.

Steps:

  • Position an oven rack in the middle of the oven and preheat to 325 degrees F.
  • Put the bacon in a large skillet and cook over medium heat, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate. Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the onion and ground beef and cook, breaking up the beef, until the onion is softened and the beef is crumbled and fully cooked, about 5 minutes. If necessary, drain any excess moisture released from the meat. Add the cooked bacon, kidney beans, navy beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar and salt. Stir together and then transfer to a 9-by-13-inch baking dish.
  • Bake until bubbling and caramelized on top, 35 to 40 minutes.

Steps:

  • Place beans in large saucepan. Add enough water to cover beans. Bring to boil; simmer on medium-low heat 2-1/2 hours or until tender.
  • Cook bacon in large skillet on medium heat until crisp. Drain on paper towels, reserving drippings in skillet for later use.
  • Crumble bacon. Add to beans along with the corn, sausage and onions; mix well. Simmer on medium-low heat 1 hour.
  • Stir flour into reserved bacon drippings in skillet; cook on medium-low heat until hot and bubbly, stirring frequently. Steps:

  • If desired, omit ham and substitute beef, chicken, or vegetable stock for the cooking water.
  • Wash beans thoroughly.
  • Place in a large kettle, cover with water and soak overnight.
  • (An alternate method is to bring beans and water to a boil,remove from heat, and cover and let stand for 1 hour.) Next drain beans and add 2 quarts of new water and ham or ham hock (or use broth if omitting ham).
  • Simmer slowly for 2-1/2 to 3 hours.
  • Then add spice packet, onion, tomatoes (undrained), lemon juice and salt to taste (spice packet contains no salt).
  • Simmer another 30 minutes or until beans are tender.
  • Take ham from soup.
  • Remove any bits of ham from bone and return to soup.
  • If using boneless ham, cut into bite-size pieces and return to soup.
  • Serve.
