COUNTRY BREAKFAST CASSEROLE

A one-dish casserole with all of your Sunday morning favorites: sausage, gravy, eggs, cheese, and toast.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
  • Brown sausage in a large skillet; drain fat.
  • Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
  • Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

Steps:

  • Trim crusts from bread; cut slices in half.
  • Grease a 13 x 9 x 2 inches baking pan (or slightly larger) and layer as follows: Cover bottom of pan with one-half of bread, one-half of ham and one-half of each of the cheeses.
  • Repeat layers.
  • Combine eggs, milk, and seasonings.
  • Pour over layers; refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking.
  • Combine topping ingredients; sprinkle over casserole.
  • Bake 375 for 45-55 minutes (cover loosely with foil to prevent top from over browning).
  • Let stand 10-15 minutes before cutting into squares.

A little different from most breakfast casseroles, as the bread goes on top and is nicely toasted when this recipe is complete. I got this recipe from Allrecipes.com, and tweaked it to my own tastes. I hope you like it, it's one of my favorites.

This dish makes a very hearty breakfast, and easily feeds a large family or group. Fortunately, it is also easy to halve this recipe. I usually serve this with a fruit salad or compote.

Easy Country Breakfast Casserole image

Steps:

  • Line a prepared 9 x 13 baking dish with frozen hash browns. Top evenly with cooked sausage (or bacon), onion, and green bell pepper.
  • In a separate dish, mix together eggs, milk, salt, pepper, and dry mustard. Pour this over meat and hash browns.
  • Top everything evenly with the grated cheddar cheese.
  • Refrigerate overnight.
  • Bake in a preheated 350 degree F oven for about 45 to 60 minutes (or until done and slightly brown).

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserving 2 tablespoons drippings in the skillet. Crumble bacon and set aside.
  • Cook and stir onion and bell pepper over medium heat in reserved drippings until tender, about 5 minutes; remove with slotted spoon.
  • Whisk eggs and milk in a large bowl. Fold hash browns, Cheddar cheese, salt, pepper, dill, onion mixture, and crumbled bacon into egg mixture; transfer to prepared baking dish.
