SWEET POTATO, ORANGE & PINEAPPLE CRUNCH

Steps:
- Preheat oven to 350°. Place sweet potatoes in a large saucepan; add water to cover. Bring to a boil over high heat. Reduce heat to medium; cook, uncovered, until tender, 10-15 minutes. Drain., Place sweet potatoes in a large bowl; mash potatoes. Stir in sugar, pineapple, eggs, sour cream, orange zest, juice, butter and vanilla; transfer to a greased 13x9-in. baking dish. For topping, in a large bowl, mix coconut, pecans, brown sugar and flour. Add butter; mix until crumbly. Sprinkle over top., Bake, uncovered, until heated through and topping is golden brown, 40-45 minutes.

SWEET POTATO CRUNCH
I have not tried this dish yet. I will be preparing this dish when I cook pork chops, my husband thinks he cannot have pork without sweet potatoes. My daughter said one of her co-workers brought this dish and everyone thought it was very good.

Steps:
- 1. Lightly grease a 9 x 13 baking dish or pan.
- 2. Mix the above ingredients with a mixer in a large bowl.
- 3. Pour the mixture into the baking dish and spread evenly.
- 4. Top with topping mixture listed above and bake at 350 degrees for 35 to 45 minutes or until center is set.

Steps:
- Mix eggs, milk, sugar, margarine, vanilla and sweet potatoes. Mix until smooth.
- Pour in to a well-buttered 13x9 baking dish.
- Mix together all ingredients for topping.
- Crumble on top of sweet potato mixture.
- Bake at 350 degrees for 30 to 45 minutes.
ROASTED SWEET POTATOES WITH CINNAMON PECAN CRUNCH
Change up your typical mashed sweet potatoes with this colorful, easy side dish.

- 1. Preheat oven to 400 degrees F. Mix 1/4 cup of the brown sugar, orange juice, vanilla, 1/2 teaspoon each of the cinnamon and ginger, and salt in large bowl. Add sweet potatoes; toss to coat well. Spoon into 13x9-inch baking dish. Sprinkle evenly with cranberries. Dot with 2 tablespoons of the butter. Cover with foil. Bake 30 minutes.
- 2. Meanwhile, mix flour, remaining 1/2 cup brown sugar and remaining 1 teaspoon each cinnamon and ginger in medium bowl. Cut in remaining 4 tablespoons butter with a fork until coarse crumbs form. Stir in pecans. Remove sweet potatoes from oven and stir gently. Sprinkle evenly with pecan topping.
- 3. Bake, uncovered, 25 to 30 minutes longer or until sweet potatoes are tender and topping is lightly browned.

- Preheat oven at 375 degrees F.
- Mix the first 5 ingredients in a food processor like cornmeal and put aside (Make sure this is cold so it turns crumbly).
- Bake the sweet potatoes until they are soft (It's better to bake than to boil, since it keeps the vitamins and color).
- Peel and beat with a mixer in a large bowl (this will remove the strings from sweet potatoes, so discard when strings show).
- Add in sugar, nutmeg, butter and extract and mix well.
- Put in 13" x 9" pan.
- Top with dry mixture.
- Chop last stick of butter and put the pats on top of crumble mixture (this will make the topping golden brown).
- Bake for 20 minutes or until golden brown.

- Mash potatoes and remove outer skins.
- Combine potatoes and next five ingredients in a mixer.
