This is a recipe from a neighbor of our when I was a little girl. She was a great cook and I remember her being thrilled to find out these did great in the newest kitchen appliance, the Crock Pot! There are several recipes close, but this is Thelma's.

- Mix all ingredients together. Place in crock-pot on high and cook for 2 hours, reduce heat and continue to cook for 2 more hours. Serve hot.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
- At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
- Cook on Low, stirring often, about 4 hours.

Definitely not quick, but well worth the wait, these beans are thick, sweet, and tangy. I've never served these without someone requesting the recipe.

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine pork and beans, bacon, onion, green bell pepper, ketchup, and brown sugar in a 9x13-inch baking dish. Cover with aluminum foil.
- Bake in the preheated oven for 2 hours, stirring every 30 minutes. Remove aluminum foil and cook 1 hour more, stirring every 15 minutes, until beans are thick and caramelized.

EASY COWBOY BEANS
My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

- Cook bacon until crispy. Drain and crumble. Put in large pot.
- Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
- Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
- Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
- These are generally better the next day, but are might fine the same day!

This is an easy recipe to throw together for a hearty meal, and it's perfect to take to a potluck. It has a tangy sweet-and-sour flavor.

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the onion, green pepper and garlic; cook until tender. Stir in all of the beans. , Combine the ketchup, brown sugar, vinegar, mustard, salt and pepper; add to bean mixture and mix well. Pour into a greased 2-1/2-qt. baking dish. Top with bacon. Bake, uncovered, at 350° for 45 minutes or until heated through.

A friend of the family shared this recipe with me in the late 80's and it's been my go to recipe for baked beans for many a pot luck dinner. I often do it in the oven but it also works great in the crock pot.

- Preheat oven to 350 degrees F.
- Cook bacon, drain on paper towels and set aside to cool. Drain skillet.
- Cook ground beef, using same skillet as the bacon, draining well about half way through. Add onion and continue to cook until ground beef is completely done and onions are softened and opaque. Drain well.
- While ground beef is cooking, drain the kidney beans and butter beans. Discard the juice.
- Chop the bacon.
- When ground beef is done and onions are tender, mix all of the ingredients together in a large bowl. Mix well.
- Pour into a 9x13 or 12x15 casserole sprayed with non-stick cooking spray. Bake in 350 F oven for 1 hour or until most of the liquid is cooked out, and thickened.
