COWBOY MEATLOAF AND POTATO CASSEROLE

Round up the family for a delicious Cowboy Meatloaf and Potato Casserole! The cowboys and cowgirls will come running for this BBQ cowboy meatloaf dish.

Cowboy Meatloaf and Potato Casserole image

Steps:

  • Heat oven to 375ºF.
  • Mix meat, yellow onions, bread crumbs, barbecue sauce, egg and chili powder just until blended; press onto bottom of 9-inch square baking dish sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160ºF).
  • Meanwhile, microwave potatoes as directed on package; place in medium bowl. Add butter, milk, parsley and garlic powder; mix well. Gently stir in bacon and French fried onions.
  • Remove baking dish from oven. Heat broiler. Spread potato mixture over meat mixture; top with cheese. Broil, 4 inches from heat, 3 to 5 min. or until cheese is melted.

1 Tbsp. butter or margarine
1 can (5 oz.) evaporated milk
1 Tbsp. chopped fresh parsley
1 tsp. garlic powder
1/2 cup OSCAR MAYER Real Bacon Bits
1/4 cup french-fried onions
2/3 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Preheat oven to 375°F. Coat 9×9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, barbecue sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish. Bake uncovered for 20 to 25 minutes, or until cooked through. Carefully pour off any excess fat if needed. Adjust oven to broil and place oven rack 6 to 8 inches from heat source. Meanwhile, microwave potatoes according to package instructions. In a large bowl, mix together hot potatoes, milk and butter, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese. Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional barbecue sauce if desired. TIP: If desired, substitute ground beef with ground turkey.

Steps:

  • Heat oven to 375ºF.
  • Reserve 1/4 cup barbecue sauce for later use. Mix remaining barbecue sauce with remaining ingredients just until blended.
  • Shape into loaf in shallow pan sprayed with cooking spray.
  • Bake 20 min. Spread with reserved barbecue sauce; bake 20 min. or until meatloaf is done (160ºF). Let stand 5 min. before slicing to serve.

VEGETARIAN COWBOY MEATLOAF

This is originally from Cooking Light magazine. This is one of my husband's favourites, and he's not even vegetarian. I found another version of this recipe that suggested using uncooked, grated potato instead of the cooked potato. That's a time-saving method probably worth a try, because there is quite a lot of prep required for this recipe.

Steps:

  • Preheat oven to 375 degrees F.
  • Saute onion and next 6 ingredients in oil in a large nonstick skillet for 3 minutes.
  • Stir in 1/4 cup barbecue sauce, potato, and the next 7 ingredients (potato through beans).
  • Spoon the potato mixture into a loaf pan coated with cooking spray. Bake for 30 minutes.
  • Brush 1/4 cup barbecue sauce over loaf, and sprinkle with cheese. Bake an additional 10 minutes or until done.
