RANCH PIZZA PIE

- Line 2 baking sheets with parchment. Heat 3 tablespoons of the olive oil in a large cast-iron skillet over medium-high heat; add the onions and cook until softened and slightly browned, about 20 minutes. Stir in the oregano, garlic and red and yellow peppers and cook for another 5 minutes. Set aside to cool for 20 minutes.
- Heat the remaining 1 tablespoon olive oil in another large cast-iron skillet over medium-high heat. Add the sausage and cook, using the back of a wooden spoon to break up the sausage meat into small bits, until browned, 10 to 15 minutes. Set aside to cool for 20 minutes.
- On a lightly floured surface, roll out each puff pastry sheet to about 13 inches long and 10 inches wide. Place one of the puff pastry pieces on each lined baking sheet; set aside the other two. Whisk the egg in a small bowl with 1 tablespoon water.
- Sprinkle 2 cups of the Monterey Jack cheese over one of the puff pastry sheets on a baking sheet, leaving a 1/2-inch border around the edges of the pastry. Continue layering with half the caramelized onions and peppers, sausage and pepperoni; finish with half the mozzarella slices. Brush the border of the puff pastry with the egg wash, lay one of the remaining puff pastry pieces over top and use a fork to crimp the edges. Using a sharp paring knife, cut three 1 1/2-inch vents in the top. Put the pie into the fridge to chill for 30 minutes before cooking. Repeat with the other puff pastry pieces and layering ingredients.
- Preheat the oven to 425 degrees F.
- Brush one of the pies with the egg wash. Bake on the bottom rack until the pastry is nicely browned, about 20 minutes.
- Wrap the second pie in plastic wrap on the baking sheet, then in aluminum foil; freeze. When ready to bake, preheat the oven to 425 degrees F. Unwrap the pie and brush it with egg wash. Bake from frozen on the bottom rack until the pastry is nicely browned, about 30 minutes.
COWBOY BBQ CHICKEN PIZZA
Whoa, cowboy! Here's a pizza you can take your hat off for. Its easy crust folds up over a meaty filling.

- Heat oven to 400°F. In medium bowl, stir Bisquick mix, sour cream and hot water with fork until soft dough forms. Place on surface dusted with Bisquick mix. Shape into a ball; knead 5 times. Roll dough into 14-inch circle; fold circle in half. Place on ungreased large cookie sheet and unfold.
- Spread chicken mixture over dough to within 2 inches of edge. Fold edge just to chicken mixture. Top with half of the bacon. Sprinkle with cheese and remaining bacon.
- Bake 20 to 25 minutes or until crust is light golden brown and cheese is melted.

COWBOY'S CLASSIC PIZZA
This pizza was created by myself and my Big Guy. We put it together a few times and every time we add alil more or alil less of something. This Cowboy Classic is very simple and quickly made. Ingredients are based on a medium size pizza and are estimated. Use more or less, depending on your taste.

Steps:
- Season chicken with creole seasoning and garlic powder. Pan fry cubes of chicken until fully cooked, set aside.
- Prep your pizza pan by spraying it with cooking oil.
- Stretch the uncooked pizza dough into a circle big enough to cover most of the pizza pan (best you can).
- Spread the dough onto the cookie sheet and press the edges to create a crust, score the dough with a fork for ventilation.
- Spread the tbsp of olive oil on the dough, especially the crust.
- Layer in this order:
- Tomato sauce, cubed chicken, diced green pepper, diced onion, mozzarella cheese. Sprinkle with oregano.
- Bake in preheated oven at 350F for 20 mins or until crust is golden and cheese is melted.

COWBOY PIZZA
Steps:
- 1. Heat oven to 425 degrees.
- 2. Place potatoes in shallow 1 1/2 to 2 quart microwave-safe dish.
- 3. Cover with plastic wrap, venting one corner.
- 4. Microwave on high 8 to 10 minutes until just tender; set aside.
- 5. Coat 12-inch round pizza pan with vegetable cooking spray; press dough evenly into pan; prick all over with fork.
- 6. Bake for 10 minutes; set aside.
- 7. Meanwhile, in large nonstick skillet over medium heat saute beef until browned; drain fat.
- 8. Mix in 3/4 cup barbecue sauce.
- 9. To assemble pizza, spread beef mixture over crust; top evenly with potatoes and bell pepper.
- 10. Drizzle with remaining 1/4 cup barbecue sauce.
- 11. Sprinkle with cheese.
- 12. Bake 10 to 15 minutes until hot throughout and cheese is melted.
- 13. Cut into 8 wedges.
- 14. NOTE: Microwave cooking times are based on a 700-watt microwave.
- 15. Adjust cooking times to your own oven.
