Steps:

  • Combine the black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeno pepper, and garlic in a large bowl. Set aside.
  • Bring the rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. All to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.

1 (2 ounce) jar chopped pimento peppers
2 tablespoons minced jalapeno pepper
1 tablespoon minced garlic
½ cup rice vinegar
½ cup extra virgin olive oil
⅓ cup white sugar
1 teaspoon salt
½ teaspoon ground black pepper

This is a refreshing salsa that can be served as an appetizer with tortilla chips (lime flavored are really good), as a salad or over rice. Quick and easy, amounts are approximate. I have used canned diced tomatoes when fresh tomatoes are not as tasty.

  • In a large bowl, mix vinegar, hot sauce, oil, garlic, cumin and pepper.
  • Peel, pit and cut avocado into 1/2-inch cubes. Add to vinegar mixture and mix gently to coat.
  • Drain and rinse peas, beans, and corn. Add peas, beans, corn, cilantro, and tomatoes to avocado; mix gently to coat. Add salt to taste.
  • Serve with tortilla chips and enjoy.

  • Pour dressing over salsa ingredients and fold a few times to combine. Cover and refrigerate for at least one hour. This can also be made a day in advance. Before serving, drain off some or all of the excess juice/dressing, if desired. Serve with your favorite tortilla chips or Fritos corn chips. It also works as a relish or side salad. This keeps well in the refrigerator for a few days.
