- In small bowl, beat buttermilk, sour cream, lemon peel, dill, pepper and salt with wire whisk.

CRAB SALAD AND BUTTERMILK CAESAR DRESSING

- Finely chop 3 garlic cloves and anchovies in processor. Add mayonnaise, buttermilk, lemon juice and Worcestershire and blend until smooth. Season dressing to taste with pepper.
- Heat oil in heavy large skillet over medium-low heat. Flatten 4 garlic cloves with flat side of knife blade. Add to oil; cook until brown, about 5 minutes. Using slotted spoon, discard garlic. Add bread cubes to oil; cook until crisp and golden, stirring frequently, about 15 minutes. Transfer to paper towels; drain.
- Toss crab and 1/4 cup dressing in medium bowl. Combine romaine, mixed greens, cheese and bread cubes in large bowl. Toss with enough dressing to taste. Season generously with pepper. Divide salad among plates. Top with crab.
SOFT-SHELL CRAB SALAD WITH GREEN GODDESS DRESSING

- To make the green goddess dressing: Simply puree the ingredients together in a blender, until light green and creamy. Cover and stick the dressing in the fridge to allow the flavors to come together.
- To prepare the soft-shell crabs: Pour the buttermilk in a shallow bowl large enough to hold all the crabs. Season the buttermilk with crab boil seasoning, salt, and pepper. Lay the crabs in the buttermilk mixture and marinate, covered, in the refrigerator for 1 hour; soaking the crabs in buttermilk helps plump them up when cooked. Remove the crabs from the milk bath and let the excess drip off.
- Pour 2 inches of oil in a heavy frying pan or large pot and heat to 350 degrees F.
- Put the flour in a pie dish or plate and season with a fair amount of salt and pepper. Dredge the crabs in the seasoned flour to coat, shaking off the excess. Lay the crabs in the hot oil in a single layer without crowding; you may have to fry them in batches. Be careful, the crabs have a tendency to pop and spatter. Cook the crabs for about 3 minutes on each side, turning once, until golden brown. Drain on paper towels.
- To assemble the salad: combine the watercress, lettuce, and onion slices in a mixing bowl. Pour in 1/2 cup of the green goddess dressing, tossing to coat. Arrange the salad on a serving platter, put the fried crabs on top, and grate the hard boiled egg over the whole thing. Garnish with lemon wedges and serve immediately.
CHOPPED ICEBERG SALAD WITH BUTTERMILK DRESSING AND CRISPY CHICKPEAS
The classic iceberg salad is always a welcome piece of Americana. You can even put the iceberg in the freezer for 30 minutes before serving to make it extra cold. So juicy. Hydrating. American. I love it. The combination here of tangy buttermilk dressing, juicy lettuce, pickled onions and crispy chickpeas is not your average chopped iceberg salad. Great textures and tastes!

- For the onions: To pickle the onions, bring the vinegar, sugar, a pinch of salt and 1 cup water to a boil in a medium saucepan over medium heat. Put the onions in a small heatproof bowl and pour the pickling liquid over them. Let the onions cool to room temperature on the counter. Transfer to a resealable container and store in the refrigerator until ready to use.
- For the buttermilk dressing: In a large bowl, whisk together the sour cream, buttermilk and mayonnaise. Add the dill, hot sauce, Worcestershire, garlic powder, garlic and salt and pepper to taste. Set aside. If too thick, add a splash of more buttermilk or water to adjust.
- For the chickpeas: Pour the oil into a small, heavy-bottomed pot and heat over medium heat until it registers 350 degrees F on a deep-fry thermometer. Fit a baking sheet with a wire rack.
- Season the chickpeas with the paprika and salt and pepper to taste. Using a slotted spoon, drop half of the chickpeas into the hot oil and fry until browned and crispy, 3 to 5 minutes. Transfer the fried chickpeas with the slotted spoon to the prepared baking sheet. Repeat with the remaining chickpeas.
- For the salad: Spread the iceberg lettuce on a baking sheet and season liberally with salt and pepper. Drizzle with the dressing and follow with a layer of the scallions. Top with the pickled onions (drained of their liquid) and the crispy chickpeas. Season to taste.

- Sweet Honey Mustard Dressing. This dressing has just the right balance of sweetness and tanginess to complement any kind of seafood dish (like crab). Here’s how I like to do it
- Lemon-Dill Vinaigrette. This vinaigrette has tangy lemon juice and fresh dill mixed in with olive oil and vinegar for an extra zingy flavor that goes well with almost any type of seafood—including crab!
- Balsamic Vinaigrette. This dressing is great if you’re looking for something a little more subtle than the sweet honey mustard dressing. It’s made by mixing together 2 tablespoons balsamic vinegar with 1/2 cup olive oil in a small bowl until combined well; add salt and pepper as desired.
- French Dressing. This one is a classic! It’s not only great for salad—you can also use it as a dipping sauce for crab cakes or as a marinade for grilled seafood (like shrimp).
- Caesar Dressing. Next up is Caesar dressing. This dressing is one of my all-time favorites because it tastes so fresh and flavorful! It’s really easy too because all you need is about 3 tablespoons mayonnaise for every 3 tablespoons lemon juice (or vinegar) along with some dry Italian seasoning and freshly ground black pepper—just mix together until smooth!
- Ranch Dressing. Ranch dressing is another great option for making your favorite seafood dishes even more scrumptious! Just mix together 1 cup mayonnaise, 1 cup sour cream, 1 tablespoon white vinegar, 2 teaspoons dried parsley flakes, 1 teaspoon onion powder, 1/2 teaspoon garlic powder, and salt and pepper until smooth—and boom!
- Blue Cheese Salad Dressing. Blue cheese salad dressing is perfect for those who like their food with a little kick! It’s got the perfect amount of tangy flavor that goes great with crab meat or simply tossed into a salad with greens and some veggies on top!
- Russian Dressing Salad Dressing. This recipe is just one of many different kinds of Russian dressing salad dressings out there—but what makes it unique is that it uses buttermilk instead of milk or cream (which gives it a lovely tangy flavor).
- Thousand Island Salad Dressing. This classic dressing is perfect for creamy crab meat or tuna salad (or whatever else you like to toss into your favorite salad).
- Honey-Lime Vinagrette. This sweet vinaigrette is perfect for topping off a salad or using as a dip for your seafood appetizer!
