FROSTED PUMPKIN CRANBERRY BARS

Steps:
- In a large bowl, combine the first six ingredients. In another bowl, whisk the eggs, pumpkin and butter; stir into dry ingredients until well combined. Stir in cranberries. , Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For frosting, in a large heavy saucepan, cook butter over medium heat for 5-7 minutes or until golden brown. Pour into a large bowl; beat in the confectioners' sugar, vanilla and enough milk to achieve spreading consistency. Frost bars. If desired, sprinkle with finely chopped dried cranberries.,

PUMPKIN-CRANBERRY BARS
Here on Zaar there are a couple of recipes somewhat like this one, but there are differences, & the Great Pumpkin is tellin' Charlie Brown that this one is pretty darn good! Preparation time does not include time needed for unfrosted bars to cool completely.

Steps:
- Preheat oven to 350 degrees F.
- FOR THE BARS, in a large bowl, mix together first 7 ingredients.
- Stir in pumpkin, butter, eggs & vanilla until well blended.
- Stir in cranberries, then spread mixture into an ungreased 15"x10" jellyroll baking pan.
- Bake 20-25 minutes or until a wooden pick inserted in center comes out clean.
- Cool completely in pan on wire rack.
- FOR THE FROSTING, melt 1/2 cup butter in a saucepan over medium heat, stirring often, until butter just starts to turn a golden color ~ DO NOT LET IT BURN!
- Remove immediately from heat & pour into a bowl.
- Let butter cool slightly, then stir in powdered sugar & vanilla.
- Stir in enough orange juice to form a frosting consistency.
- When pan of uncut pumpkin bars is cooled completely, frost & cut into bars.
- Serve & enjoy & refrigerate leftovers.

CRANBERRY BOG PUMPKING BARS
Steps:
- 1. Preheat oven to 350 degrees Cut butter in pieces. In a food process, process all ingredients for the crust until mixture begins to form small lumps. Empty mixture into a 13 by 9 by 2-inch baking pan then with a metal spoon press dough evenly into bottom. Bake in middle of oven until golden, about 20 minutes. Cool completely before filling. 2. Mix together pumpkin,sour cream and spices in a medium bowl until evenly a light pumpkin color. In a seperate bowl, combine sugar and gelantine. Place water in a small saucepan. Split open vanilla bean and scrape with a knife then, add bean and all to water. Bring to a boil stirring constently . Empty into sugar-gelantine bowl and stir until gelantine is disolved. After five minutes, remove vanilla pod and add to pumpkin bowl. Stir until well combined and no white lumps remain. You may use a hand mixer on low speed. Place in refrigerator for fifteen minutes. 3. Pour chilled filling over cooled bottom crust and evenly spread. Float (like in a bog!) teaspoonful amounts of whole cranberry sauce over top of filling in a random pattern. Place in refrigerator for at least 3 hours. Preferably over night. 4. Before cutting, run a knife around inside edge of pan to loosen filling. Make 12 bars or 24 squares.
CRANBERRY BOG COCKTAIL
Steps:
- Combine champagne and cranberry juice in a champagne flute. Drop a few whole cranberries in the glass and garnish with mint leaves.

- Heat oven to 180C/160C fan/gas 4. Line the base of a 20cm square tin with baking parchment.
- In a large bowl, mix together the flour, oats, sugar and cranberries. Make a well in the centre and add the butter, golden syrup, egg and vanilla extract. Stir well until evenly damp.
- Tip into the tin and spread out evenly. Sprinkle with almonds and bake for 20-25 mins until lightly golden. Cool in the tin for 10 mins, then cut into 6 one way and 2 the other to make 12 bars. Dust with icing sugar.

- In a large mixing bowl, cream 1 cup butter and 1 cup brown sugar.
- Stir in 2 1/2 cups oats and flour.
- Press into greased 9x13 baking pan.
- Spread with cranberry sauce.
- In a microwavable safe bowl; melt remaining butter; stir in the pecans and remaining brown sugar and oats.
- Sprinkle over cranberry sauce Bake at 375 for 25-30 minutes or until lightly browned.
- Cool on wire rack.
- Cut into bars.
- I did not use the pecans and it turned out great.

- In a saucepan, bring sugar and water to a boil. Add cranberries and cook until they pop, about 4-6 minutes. Add orange juice, orange zest, butter, cinnamon and salt. Cook 5 minutes longer or until mixture thickens. Remove from the heat; stir in walnuts and set aside. , For crust, combine the flour and salt in a bowl; cut in butter until mixture is crumbly. Add sugar and oats; mix well. Spoon half into an ungreased 13x9-in. baking pan; pat firmly into pan. Spread filling evenly over crust. Top with remaining crumb mixture; pat lightly. , Bake at 400° for 30-35 minutes. Cool on a wire rack. Cut into bars.

- Heat oven to 375°F. Grease 13x9-inch pan with butter or cooking spray.
- In large bowl, mix flour, 1 cup sugar, the almonds, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in egg. Press 2 1/2 cups of crumb mixture in bottom of pan. Stir cinnamon into remaining crumb mixture; set aside.
- In medium bowl, stir all filling ingredients. Spoon evenly over crust. Spoon reserved crumb mixture evenly over filling.
- Bake 45 to 55 minutes or until top is light golden brown. Cool completely. Refrigerate until chilled. Cut into 6 rows by 4 rows. Store tightly covered in refrigerator.
