"CRANCRACK" CRANBERRY SALAD
This was my mothers recipe, and named by my son because it is so addictive. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

Steps:
- Process cranberries and orange in a food processor until finely ground.
- Stir boiling water, sugar, and gelatin together in a bowl until gelatin and sugar dissolve. Add cranberry mixture and pineapple with juice; stir. Pour into a 8-inch square serving dish, cover the dish with plastic wrap, and refrigerate until set, about 45 minutes.

- 1. Put pretzels in a gallon zip lock bag. Mix cayenne pepper, lemon pepper, garlic powder, ranch & canola oil together...pour over pretzels in zip lock baggie. It's best if you can leave over night but a couple hours will work, too. I always bag them the night before & cook them the next morning.
- 2. Spread out on large baking sheet. Bake at 200 for 40 min.
- 3. .*** My husband likes a real kick to these, so I double the cayenne, lemon pepper, and garlic salt when mixing the spices...He LOVES them like that!!***

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine cranberries with sugar in a 2 quart baking dish with a lid, stirring well to coat all the berries. Bake in the preheated oven, covered, for about 30 minutes, until the cranberries pop and release their liquid.
- Remove from oven and stir in the apricot jam and pecans. Refrigerate overnight to blend the flavors. To serve, allow the cream cheese to come to room temperature, and pour dip over the block of cream cheese on a serving dish. Serve with buttery round crackers or small pretzels.

CRANBERRY PRETZEL CRACK

Steps:
- Mix cereal, pretzels, almonds, and cranberries into two 9x13 pans. Mix brown sugar, butter and corn syrup in a small pan and bring to a boil. Boil for 5 minutes without stirring. Add baking soda and mix. Pour over pretzel mix. Bake at 300 degrees for 15 minutes. Stir and bake 5 more minutes. Spread out onto greased foil or parchment paper (NOT wax paper) to cool. Store in airtight container.

- Once pretzels are crushed, place a stick of butter in a saucepan over medium heat. Once melted, add sugar and pecans. Stirring until sugar is dissolved.
- Remove from heat, add the crushed pretzels and stir until well coated. Press crust mixture into a 10 x 7″ pan and bake for 8-10 minutes. Take care not to overbake. Remove from oven and set aside to cool.
- While crust is baking, boil water for cranberry Jell-O topping. Mix gelatin in boiling water and set aside until it sets to the consistency of egg whites. Once it reaches this point, stir in entire can of whole berry cranberry sauce.
