CREAMSICLE® COCKTAIL
In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

Steps:
- Pour vodka into a chilled single rocks glass or stemless wine glass and add ice. Add orange sherbet and lemon sorbet. Top with lemon-flavored sparkling water and orange-flavored carbonated water. Use a long-handled or tall drink spoon to quickly stir together until completely blended.
- Top with Prosecco and garnish with lemon slice.

BOOZY FROZEN CREAM BARS

- Pour 1/3 cup of the coconut cream out of the can and reserve. Add the orange zest, remaining coconut cream, 2 tablespoons of the honey, the Campari and lemon juice to a blender. Slice the ends and rind off the oranges, cut into chunks and add to the blender. Purée until smooth.
- Fill 8 ice pop molds two-thirds of the way up with the mixture. Add the ice pop sticks and freeze until the pops begin to freeze but aren't frozen through, about 1 hour.
- In the meantime, whisk the reserved coconut cream and remaining honey together. Pour the coconut cream into the semi frozen molds, filling them the rest of the way. Place back in the freezer and freeze until solid, about 1 more hour. Unmold when ready and serve!

- Combine all ingredients in a large mixing bowl until sugar dissolves. Cover and refigerate 1 hour. Transfer to ice cream maker and follow manufacturer instructions.

- Line loaf pan with a double layer of plastic wrap, allowing a few inches of overhang along sides. Stir together cookie crumbs, zest, butter, and corn syrup in a small bowl, then press into bottom of loaf pan. Spread sorbet evenly over crumb crust and freeze 30 minutes to harden.
- While sorbet is freezing, slightly soften frozen yogurt. Spread evenly over sorbet and freeze, covered with plastic wrap, until firm, at least 2 hours.
- Using plastic wrap as an aid, lift frozen cake out of pan, then peel off plastic. Let stand 5 minutes to soften, then cut crosswise into 4 slices. Each serving contains about 197 calories and 3 grams fat.

- Mix cream, vanilla, and Splenda. Refrigerate. Mix juice and sugar. Freeze 1 hour. Stir. Freeze an additional three hours. Whisk cream until softly whipped. Spoon into bowl. Scrape frozen juice flakes over cream with a fork.
