STRAWBERRY-CAMPARI CRUNCH PARFAITS

Sweet and boozey berries layered with oat crumble and Campari accented soft mascarpone cream make these stunning parfaits a sensational dessert that will arouse your tastebuds! A lush ruby red Italian bitter, Campari is known for its bold herbal bitterness with notes of rhubarb, berry, and a floral finish. Campari's complex flavors are a sensational balance for simply sweet strawberries. Inspired by Caroline Ford's Strawberry Campari Tart featured in Serious Eats "Spirited Cooking". Note: you can substitute crushed Italian amaretti cookies for the oat crumble, if available.

Strawberry-Campari Crunch Parfaits image

Steps:

  • Combine oats, brown sugar, and butter; mix well. Spread in 15-10-1-inch baking pan; bake at 350 degrees F for 10 minutes, stirring occasionally. Crumble; cool.
  • In a mixing bowl, beat mascarpone cheese with sugar, Campari, and vanilla for about 2 minutes, or until mixture is light and fluffy and the sugar is fully dissolved.
  • In a separate bowl, whip heavy cream on high for 2 minutes, or until stiff peaks form. Gently fold 1/2 of the whipped cream into mascarpone mixture to combine; gradually fold in remaining whipped cream.
  • Toss strawberries with sugar and Campari in a small bowl. Let sit for about 5 minutes, stirring occasionally, until sugar is dissolved.
  • Layer Oat Crumble (or crushed Italian amaretti cookies), Mascarpone Cream, and Strawberries in parfaits or dessert glasses and garnish with fresh mint, or refrigerate separately until ready to serve.

Steps:

  • 1. Cut pineapple half into two equal portions. Chop one portion of the pineapple into small pieces. Set aside. Cut remaining pineapple portion into large chunks. Place in food processor. Cover and process until pureed. Set aside.2. In small saucepan heat wine over medium heat for 1 minute. Add pineapple puree. Cook over medium heat for 2 minutes more. Stir in raisins and chopped pineapple. Cook, stirring occasionally, for 2 minutes. Remove from heat. Cool.3. In small mixer bowl beat milk and topping mix on low speed of electric mixer until combined. Increase speed to high. Beat about 4 minutes or until stiff peaks form (tips stand straight). Add cream cheese and vanilla. Beat until combined.4. In large bowl break MURRAY SUGAR FREE Oatmeal Cookies and Murray Sugar Free Chocolate Chip Cookies into bite-size pieces. Stir in cinnamon. Set aside.5. To assemble, in 10 parfait glasses layer some of the pineapple mixture, some of the cream cheese mixture, some of the strawberries and some of the cookie mixture. Repeat layers. Top with additional pineapple mixture. Garnish with mint. Serve immediately.
