Steps:

  • Heat oil in a saute pan. Add garlic and onions and saute until onions are fragrant. Add the sweet peppers to the pan and saute for about 2 minutes. Stir in the tomato paste, tomatoes, and the thyme. Add the conch and the reserved liquid. Add chile pepper and season, to taste. Allow to simmer until conch is tender and sauce is slightly thickened. Serve over white rice.

Steps:

  • Bring the milk and water to a boil in a heavy-bottomed saucepan over medium heat. Stir in the salt. Slowly add the grits, stirring constantly. When the grits begin to thicken, turn the heat down to low and simmer for 30 to 40 minutes, stirring occasionally to prevent the grits from scorching. Add the butter and cream, stirring to incorporate thoroughly, and simmer for 5 minutes. Stir in the pepper. Serve the grits immediately or keep them warm, covered, in a double boiler over simmering water.
  • Note: If the grits are too thick, stir in more cream or milk. Remember that grits solidify as they cool; they will get thicker once on the plates.

CREAMY "GRITS" WITH CREOLE SHRIMP

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and 1 tablespoon butter. When butter melts into extra-virgin olive oil, add garlic, onions, celery, bell peppers, thyme, bay leaf then season with salt and pepper. Cook veggies 7 to 8 minutes until tender, add in the Worcestershire, 1 to 2 tablespoons hot sauce (medium to spicy heat level) and the flour and cook 1 minute more then add in beer and cook it off, another 30 seconds or so. Whisk in 1 cup of stock then add tomatoes and okra, if using, and bring to a bubble. Add shrimp and cook 3 to 5 minutes, until shrimp turn pink and firm then turn off heat. Remove thyme stems and bay leaf.
  • Bring remaining 2 tablespoons butter, 2 cups stock, 1 cup milk and 2 teaspoons hot sauce, to a boil in a sauce pot. Stir in 1 cup quick cooking polenta. Stir constantly to mass the cornmeal. Once the mixture thickens to the consistency of whipped potatoes, season the "grits" with salt and divide among dinner plates.
  • Serve generous ladles of shrimp and sauce on a bed of creamy "grits".

Steps:

  • For the lobster, remove meat from shell and submerge in butter over high heat. Cook at 160 degrees F to 190 degrees F for about 8 minutes until meat is tender and almost cooked. Cut in 1-ounce medallions and allow to cool and season with salt and pepper.
  • For the foie gras mousse, sear foie gras for 40 seconds on each side. In a food processor, mix foie gras, heavy cream. Add truffle oil, salt and pepper and mix on high. Place in piping bag.
  • For Calvados beurre blanc sauce, add oil, and saute the shallots, garlic, lemon grass, kaffir leaves and apples into a large stock pot and delgaze with Calvados. Add thyme and parsley stems, reduce for 10 minutes. Add veal stock and reduce. Add cream and salt and pepper. Finish off with the butter and combine until smooth. Add lemon zest and strain through fine mesh.
  • For pear and apple confit, mince pear and apple and marinate in remaining ingredients. Season with salt and pepper.
  • For garnish, dredge lotus chips in potato flour and deep-fry to golden brown and drain.
  • To assemble, cut puff pastry to 2-inch rounds and brush with egg wash. Place in a preheated 350 degrees F oven for 12 minutes, allow to cool, and cut them in half. Pipe foie gras mousse onto puff pastry and place 1-ounce lobster on top. Ladle beurre blanc sauce on top with pear and apple confit. Drizzle port reduction and garnish with 1 lotus root chip and chive spear. Line chaffing dish with rice noodles and place appetizer on top.

Steps:

  • Heat a large straight-sided skillet over medium heat. Add the olive oil and bacon and cook until the bacon is beginning to crisp, 8 minutes. Add the shallots, garlic and red pepper flakes and cook for an additional 3 minutes, until fragrant. Add the salt, tomato puree and cream; stir to combine. Reduce the heat to low and simmer for 5 minutes.
  • Bring a large pot of salted water to a boil. Cook the linguine for 1 minute less than the package instructions, about 10 minutes. Using tongs, remove the pasta from the water and add it directly to the pan with the sauce. Sprinkle the cheese directly on the naked pasta and toss to coat in sauce. Add up to 1 cup of the pasta water to loosen the sauce as needed. Stir in the arugula, basil, tarragon, peas and lobster meat; simmer until everything is heated through, 1 minute. Serve with additional Parmesan if desired.
