CREAMY QUINOA RISOTTO

Just as creamy and delicious as traditional risotto...but it's actually healthy!

Creamy Quinoa Risotto image

Steps:

  • Rinse quinoa twice and drain well.
  • Pour chicken broth into a saucepan; bring to a boil.
  • Melt butter in a separate saucepan over medium-high heat; saute onion and garlic until onion is soft, about 5 minutes. Stir quinoa into onion mixture; cook, stirring frequently, until quinoa is toasted and coated in oil, about 3 minutes.
  • Slowly pour wine over quinoa mixture; cook and stir until wine is absorbed, about 5 minutes. Ladle 1/2 cup chicken broth over quinoa mixture; cook, stirring frequently, until absorbed, 3 to 5 minutes. Continue ladling broth, 1/2 cup at a time, over quinoa mixture; cook, stirring frequently, until quinoa is tender and has burst, about 20 minutes. You may not use all the chicken broth.
  • Mix Parmesan cheese and cream into quinoa mixture; season with marjoram, thyme, salt, and pepper. Add a splash of chicken broth to make quinoa more creamy, if desired.

Steps:

  • Bring the beef broth, water, and quinoa to a boil in a saucepan. Reduce heat to medium, cover, and cook 5 minutes. Stir in the green onions, mushrooms, green beans, and tarragon; continue cooking until the green beans are tender, about 5 minutes. Stir in the evaporated milk, and season to taste with salt and pepper. Simmer 2 more minutes until heated through.

If raw garlic is too strong for you, roast it before putting it in the sauce.

Quinoa With Creamy Garlic Sauce image

Steps:

  • Start by cooking the quinoa. Rinse it with water and drain, then add 2 cups water and a sprinkle of sea salt to the water. Bring this to a boil, then turn down to simmer for 20-30 minutes. When you see the swirl of the grains, with a translucent center, the quinoa is fully cooked. It should be fluffy if you don't stir the quinoa while it cooks.
  • Make the sauce while the quinoa is cooking by putting the rest of the ingredients in a blender or food processor. Blend the zucchini with enough coconut milk and/or water to get it smooth. Add the garlic and onion in stages to make sure the sauce stays smooth.
  • Serve the cooked quinoa topped with the sauce alone, or add some chopped vegetables, steamed or raw.
