EYEBALL MARTINI

We fashioned spooky eyeballs out of radishes, olives and grapes and added them to a traditional martini for a creepy cocktail for your next grown-up Halloween party.

Eyeball Martini image

Steps:

  • To make each radish eyeball, peel radish, leaving streaks of red skin for "blood vessel" effect. Cut off one tip of radish about 1/4-inch deep. Using small melon baller or paring knife, scoop out small hole from sliced tip side; place olive half in center. Place in martini glass.
  • To make each grape eyeball, carefully peel back skin of grape from one edge. Using small melon baller or paring knife, cut small hole in center of exposed flesh. Place small cranberry or blueberry in hole. Skewer grapes onto toothpick; place in martini glass.
  • To make each olive eyeball, place baby carrot in pitted hole of olive. Cut off carrot flush with end of olive. Skewer olives onto toothpick; place in martini glass.
  • To make cocktail, place several ice cubes in cocktail shaker or mixing glass. Add gin and vermouth. Cover; shake (or stir) 30 seconds. Strain into martini glass and serve.

2 jumbo pitted ripe olives

1/2 oz (1 tablespoon) dry vermouth

Steps:

  • Using a paring knife, scrape off most of the red skin from the radish, leaving just enough red to give the radish a veined appearance. Rinse radishes.
  • Using a very small melon baller, cut a small hole in the stem end of each radish. Insert an olive half, cut side out, into each hole; serve.

20 radishes, cleaned and trimmed
10 small pimento-stuffed olives, halved crosswise

SPOOKY HALLOWEEN EYEBALLS

These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

Spooky Halloween Eyeballs image

Steps:

  • Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
  • Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
  • Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

Steps:

  • Peel the hard-boiled eggs and slice each egg in half. Scoop out the yolks and fill the egg cavities with the cream cheese.
  • Press a stuffed olive, pimento side upwards, into the centre of each cream cheese-filled cavity.
  • Dip the tip of a toothpick in red food colouring and trace lines like broken blood vessels on the cream cheese.
  • Peel the radishes leaving thin steaks of red skin on each radish to represent broken blood vessels.
  • Using the tip of a vegetable peeler or a small, sharp knife carefully scoop out an olive-sized hole in each radish.
  • Stuff each radish with a stuffed olive, pimento side facing out.
  • Arrange the egg eyeballs and radish eyeballs in pairs on 6 serving plates and serve.
