CREME DE MENTHE COOKIES

This is my mother's Christmas recipe. She made these every year and whenever I smell them baking, I think of her. -Beth Cates, Hampton, Tennessee

Creme de Menthe Cookies image

Steps:

  • In a large bowl, cream margarine and sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 325°. Roll each portion of dough between 2 sheets of waxed paper to 1/4-in. thickness (dough will be soft). Cut with a floured 2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets. Bake until set, 7-8 minutes. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar and enough creme de menthe to reach a spreading consistency. Spread evenly on bottoms of half of the cookies; cover with remaining cookies. In a microwave, melt chocolate chips; stir until smooth. Frost cookies.

2 cups confectioners' sugar
4 to 5 tablespoons green creme de menthe
1 cup semisweet chocolate chips

ANDES CRèME DE MENTHE COOKIES - ANDES MINT COOKIES

I found this recipe on the back of Andes Crème de Menthe Baking Chips. I made a few small changes and am really pleased with the results! These cookies taste very similar to the Girl Scouts Thin Mint Cookies!

Andes Crème De Menthe Cookies - Andes Mint Cookies image

Steps:

  • Preheat oven to 350°F Do not do this until after dough has been refrigerated.
  • Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed.
  • Add Andes Baking Chips and mix.
  • Add Flour and continue to mix until all ingredients are well blended together.
  • Cover and chill in the refrigerator for 45-60 minutes.
  • Spoon out approximately 1 oz of dough per cookie.
  • Form a ball and then slightly flatten.
  • Place on non-stick baking pans and bake for approximately 8-10 minutes.
  • Cool on pans for 2 minutes, then remove.

Creme de Menthe Cheesecake Cookies image

Steps:

  • Preheat oven to 350°. In a large bowl, beat cookie dough and flour until blended and dough is softened. Beat in egg. Add cream cheese; beat until smooth. Stir in baking chips. (Dough will be soft.), Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until bottoms are golden brown, 11-13 minutes. Cool 2 minutes before removing from pans to wire racks to cool completely., If decorating cookies, melt candy coating in a microwave. Cut a small hole in the tip of a pastry bag; insert a small round pastry tip. Fill bag with melted coating. Pipe designs onto cookies; decorate with sprinkles. Freeze option: Freeze undecorated cookies in freezer containers. To use, thaw and decorate as desired.

Steps:

  • In a small bowl, mix crushed cookies and melted butter. Reserve 3 tablespoons for topping. Press remaining mixture onto bottom of a greased 8-in. square baking dish. Refrigerate 30 minutes., In a large microwave-safe bowl, sprinkle gelatin over 1/2 cup cold milk; let stand 1 minute. Microwave on high for 30-40 seconds. Stir until gelatin is completely dissolved. Add marshmallows; cook 1-2 minutes longer or until marshmallows are puffed; stir until smooth. Stir in creme de menthe. Refrigerate 15-20 minutes or until cold but not set, stirring often., Meanwhile, in a small bowl, gradually beat cream cheese until smooth. In another bowl, whisk pudding mix and remaining cold milk. Gradually beat into cream cheese., In a large bowl, beat cream until soft peaks form; fold into marshmallow mixture. Spoon half of the mixture over prepared crust; refrigerate 10 minutes. Layer with pudding mixture and remaining marshmallow mixture; top with reserved crumbs. Refrigerate 2 hours or until set.

These were a big hit for christmas. I don't recall how many they made I'm thinking 40. These are moist little morsels of nuts flavored with apple and buttershots liqueur. These are better as they sit in an air tight container.

  • Place nut and wafers into a food processor and process till fine.
  • Add rest of ingredients and process till all well combined.
  • Shape into 1 inch balls pressing to mold them.
  • Roll in cinnamon and sugar.

  • In sauce pan combine 1/2 cup of the butter and the cocoa powder. Heat and stir until well blended. Remove from heat; add 1/2 cup of the powdered sugar, the egg and vanilla. Stir in graham cracker crumbs. Mix well. Press into bottom of an ungreased 13 x 9-inch baking pan.
  • Melt another 1/2 cup of the butter. In small bowl combine the melted butter and creme de menthe. If your brand of crème de menthe is clear, and you want a green filling, add a few drops of green food coloring. At low speed of electric mixer beat in the remaining 3 cups powdered sugar until smooth. Spread over the chocolate crust. Chill 1 hour.
  • In small sauce pan combine the remaining 1/4 cup butter and chocolate pieces. Cook and stir over low heat until melted. Spread over middle layer. Chill 1 to 2 hours. Cut into small squares -- the yield will of course depend on how big you cut these! The photo shows a bit of a larger bar because they are so yummy. Store in refrigerator.
