- Preheat oven to 425 degrees F (220 degrees C). Grease a baking sheet.
- Cut each potato into 12 wedges; place in a large bowl. Toss potatoes with olive oil, garlic, salt, pepper, onion powder, and paprika. Arrange in a single layer on prepared baking sheet.
- Bake in preheated oven for 20 minutes. Turn potatoes over and continue baking until golden and crisp, 25 to 30 minutes longer.

- Preheat oven to 400 degrees F (200 degrees C).
- Mix paprika, olive oil, garlic powder, chili powder, salt, and black pepper together in a bowl until marinade is smooth.
- Place potatoes in a baking dish; add marinade and rub into potatoes. Sprinkle bread crumbs over potatoes and coat each wedge well.
- Bake in the preheated oven for 30 minutes. Reduce heat to 355 degrees F (180 degrees C) and continue cooking until wedges are tender enough to puncture with a fork, about 30 minutes more.

- Cook potatoes in boiling water until tender (20-30 minutes). Drain and cool. (This can be done 1 day ahead chilling potatoes). Peel potatoes and cut each into 6 wedges.
- Melt butter in a large skillet. Remove from heat. Stir in rosemary, paprika, salt and pepper.
- Roll potato wedges in seasoned butter.
- Place potato wedges on a cookie sheet.
- Stir in 1 1/2 cups breadcrumbs (panko)in skillet (with butter), making sure crumbs are well coated with the butter.
- Roll potatoes in buttered crumb mixture and then return potatoes to cookie sheet. (This can be done 1 day ahead--cover with plastic wrap and chill up to one day).
- Preheat oven to 350-degrees F. Bake potatoes until crisp (45 minutes).

Steps:
- Preheat oven to 400° or heat the barbecue.
- Place potato wedges in saucepan and cover with cold water, add 1 tsp of salt and bring to a boil cooking for only 3-5 minutes.
- Drain well and place in a roasting pan with the lemon wedges, garlic, onions and bay leaves. (for barbecue, make a pan frame of foil large enough to hold all the potatoes, spray or brush with oil and place the same ingredients in).
- Combine the lemon juice, water and tomato paste in a small bowl and add the spices and herbs and mix together well. Pour the spice mixture over the potatoes in the pan (foil) and toss together lightly.
- Drizzle oil over top and cook in preheated oven for 35-40 minutes, or until the potatoes are tender and all the liquid has been absorbed. Turn the mixture frequently with a metal spatula.
- Potatoes should be slightly crispy and brown and red in colour.
- Can be served on it's own as an appetizer with dip, or with meat and poultry.

- When cutting the potatoes, the aim is to end up with 8 equal-sized wedges from each. Cut the potatoes in half lengthways, then lengthways again to make quarters, then again to create wedges. For this last cut, I prefer to start from the skin side and cut at a 45° angle towards the inner point. But do whatever you find easiest.
- Next, place the wedges in a large bowl and cover with warm (not boiling) water. Leave to soak for 10-15 minutes and preheat the oven to 200°C (390°F).
- Once the potatoes have soaked for 10-15 minutes, drain away the water and set the potatoes aside on a board or plate lined with kitchen towel. Pat them dry with another few pieces of kitchen towel.
- To the empty bowl, add the olive oil, cayenne pepper, black pepper, garlic powder, smoked paprika, cumin, oregano, and salt. Mix well to combine all the spices with the oil.
