CRISP CARAWAY TWISTS
This appetizer is always a hit when I serve it on holidays or special occasions. The flaky cheese-filled twists (made with convenient puff pastry) bake to a crispy golden brown. When our big family gets together, I make two batches. —Dorothy Smith, El Dorado, Arkansas

Steps:
- In a small bowl, beat egg, water and mustard; set aside. In another bowl, combine the cheese, onion, parsley, caraway seeds and garlic salt. , Unfold pastry sheet; brush with egg mixture. Sprinkle cheese mixture lengthwise over half the pastry. Fold pastry over filling; press edges to seal. Brush top with remaining egg mixture. Cut widthwise into 1/2-in. strips; twist each strip several times. , Place 1 in. apart on greased baking sheets, pressing ends down. Bake at 375° for 15-20 minutes or until golden brown. Serve warm.

- Cook pasta according to package directions. Meanwhile, in a large saucepan, saute onion and garlic in 4 tablespoons butter until tender. Stir in the flour until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheeses until melted., Melt the remaining butter; stir in bread crumbs and Italian seasoning. Drain pasta; toss with cheese sauce. Sprinkle with seasoned bread crumbs.

WW CRISP-AND-SPICY CHEESE TWISTS 1-POINT
This is from a Weight Watchers cookbook called Simple Goodness. Use a pizza cutter to cut strips more easily. I freeze them in zip lock bags and heat in the microwave about 20 to 30 second.

Steps:
- Preheat oven to 425 degrees.
- Combine first 3 ingredients in a samll bowl; stir well, and set aside.
- Unroll pizza dough, and roll into a 12 x 8 inch rectangle.
- Lightly coat suface of dough with cooking spray, and sprinkle with 2 tablespoons cheese mixture.
- Fold dough in half to form an 8 x 6 inch rectangle.
- Lightly coat surface of dough with cooking spray, and sprinkle with remaining cheese mixture.
- Using fingertips, press cheese mixture into dough.
- Cut dough into 16 (8-inch-long strips.
- Gently pick up both ends of each strip, and twist dough.
- Place twisted strips of dough 1/2 inch apart on a large baking sheet coated with cooking spray.
- Bate at 425 degrees for 8 minutes or until lightly browned.
- Remove twists from pan, and let cool on wire racks.

- Combine parmesan cheese, pepper and garlic powder. Unfold pastry sheets onto cutting board. Brush lightly with egg white; sprinkle each sheet with 1/4 of the cheese mixture. Lightly press into pastry, turn over; repeat. Cut each sheet into 12 (1-inch) strips; twist.
- Place on ungreased cookie sheet and bake in 350 degrees F (175 degrees C) oven for 15 minutes or until golden brown.

- PREPARE CHEESE TWISTS: Unroll the two sheets of puff pastry dough onto a lightly floured cutting board or parchment paper. Each sheet should be about 10 x 12 inches (stretch a bit if needed). In a small bowl, mix together water, egg, salt and mustard powder mustard. Lightly brush this egg wash on the puff pastry sheets. Sprinkle on the cheese and thyme (if using) evenly. Press down gently with the heel of your hand (or a rolling pin) to make the cheese stick to the dough. Using a pizza cutter or knife, cut first sheet into about 12 strips. Also cut the strips in half if you want shorter twists and twice as many. Repeat with 2nd sheet of dough.
- BAKE: Cover two large baking sheets with parchment paper. Twist each strip into a corkscrew and lay it on the pan. Repeat until all strips have been twisted. Leave a little space (about 1/2 inch) between each twist as they will expand a bit. Bake for 10-15 minutes or until the cheese twists are golden brown. Turn half way through for more even browning.
