CHOCOLATE BANANA SPLITS

- Cut a small piece off the curved side of 4 unpeeled bananas so they can sit flat, then make a deep slit down the center of the other side through the peel. Place each on a sheet of foil. Open the slits and brush the bananas with melted butter, then sprinkle with sugar and stuff each with 1 ounce chopped semisweet chocolate. Fold in the sides of the foil and seal to form a packet. Grill over high heat until the chocolate melts, 6 to 8 minutes. To serve, open the peels and top with chocolate ice cream, whipped cream, nuts and a maraschino cherry.

Steps:
- Mix cookie crumbs and butter; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.
- Beat cream cheese, sugar and 2 Tbsp. milk in medium bowl with whisk until blended. Stir in 1 cup COOL WHIP; spread over crust. Top with bananas.
- Beat pudding mixes and 3-1/4 cups milk with whisk 2 min.; spread over bananas. Let stand 5 min. or until thickened; cover with remaining COOL WHIP. Refrigerate 4 hours.
- Top with cherries, nuts and syrup just before serving.

CARAMELIZED BANANA SPLITS WITH HOT CHOCOLATE SAUCE

- Melt butter in a 12-inch heavy skillet over medium heat, then add bananas in 1 layer and sprinkle with brown sugar. Increase heat to medium-high and cook bananas, gently turning once and shaking skillet occasionally, until sugar is caramelized, 3 to 4 minutes. Divide bananas among 4 bowls, leaving any remaining caramel in skillet.
- Add cream to skillet and boil over medium heat, stirring, until caramel is dissolved. Add chocolate with a pinch of salt and whisk until melted.
- Top bananas with scoops of ice cream, then drizzle with some of chocolate sauce and sprinkle with nuts. (There will be extra sauce.)
QUICKIE BANANA SPLIT
Steps:
- Combine the 2 chocolates in the top half of a double boiler set over barely simmering water. Stir constantly until all chocolate is melted, then whisk in the corn syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. (The sauce can be made up to 24 hours in advance and refrigerated. To re-warm, stir over low heat or heat in a microwave.)
- Whip the heavy cream and add the sugar when the cream starts to grow in volume. Continue whisking until light and fluffy.
- Build a banana split in a tall martini glass by placing a triangle of banana leaf at the back of the glass. Cut banana in half then split them lengthwise. Dip the cut sides in coarse sugar and caramelize with a torch or place under broiler. Lay in the glass like rabbit ears. Add scoops of ice cream, then chocolate sauce, whipped cream and peanuts. Finish with a sprig of mint.
CRISPY CHOCOLATE BANANA 'SPLIT'
Steps:
- Lay out a wrapper and put together the banana filled with the almonds. Roll like a spring roll and seal with egg wash. Fry at 350 degrees until golden brown and delicious. Sprinkle with powdered sugar. To make ganache, scald cream and add to the chocolate. Stir until completely melted.
- PLATING Place 3 scoops ice cream in a banana boat. Top with fried banana slice on the bias. Top with whipped cream, almonds and drizzle with ganache.

HOT CRISPY WONTONS STUFFED WITH CHOCOLATE AND BANANAS
Steps:
- The day before you plan to make this recipe, leave the milk chocolate in a warm place to make it slightly pliable. Cut each bar into 8 chunks and, with your hands, try to form each chunk into a disk the size of a quarter with no sharp edges. Lay the wonton skins out on a surface and 1 at a time; paint the edges with water. In the center of the wonton skin, place a disk of milk chocolate and a banana slice on top of the chocolate. Fold the wonton skin corner to corner to make a triangle and press together well to seal completely. Cover with plastic wrap and store chilled until ready to fry and serve, up to 10 hours ahead.
- Heat the oil in a deep pot to 350 degrees. Drop the wontons into the oil, being careful not to crowd them (you may have to work in batches) and fry, turning often, until golden brown. Meanwhile, place the cinnamon sugar in a bowl. Remove the wontons with a slotted spoon and immediately dredge them in the cinnamon sugar to coat heavily. Serve right away with scoops of vanilla ice cream.

- Preheat oven to 400 degrees.
- Butter 9 inch pie pan or shallow baking dish.
- Topping:.
- In small bowl mix together flour, oatmeal, sugar, coconut and butter.
- With fingertips, blend the ingredients until the mixture resembles coarse crumbs.
- In separate bowl combine orange liquor and lime juice.
- Peel bananas and slice them on the diagnal in 1/4 inch ovals.
- Arrange the slices in a single overlapping layer and sprinkle with lime juice mixture, nutmeg and brown sugar.
- Sprinkle topping evenly over the bananas.
- Bake until the juices are bubbly and the topping is crisp and brown, about 20 minutes.
- Serve warm with fresh cream, yogurt or ice cream.
