Smooth Cranberry Sauce image

Steps:

  • Rinse berries in cold water. Sort through and pick out any that are split, shriveled, or not ripe -- meaning they're much lighter in color than the rest.
  • Mix the sugar and water in a pan and stir, then put on high heat until it comes to a boil. Add the berries and stir, then bring back to a boil. Reduce heat and simmer, stirring occasionally, until the berries start to pop.
  • Pour the cooked berries into a colander. Press everything through with a large spoon or the bottom of a glass. (Alternatively, process through a food mill.) Stir gently, and refrigerate until set.

Perfect Cranberry Sauce image

Steps:

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

Cranberry Strawberry Sauce image

Steps:

  • In a saucepan, combine cranberries, water and sugar. Bring to a boil, stirring until sugar is dissolved. Boil gently, uncovered, 3-4 minutes or until about half of the cranberries burst. Remove from the heat; immediately add strawberries. Let stand until strawberries are completely thawed, stirring occasionally. Refrigerate.

VANILLA CRANBERRY SAUCE

Now THIS is worth writing home about, so here I am! I wanted to do something different with my cranberry sauce this year. Enough of the citrus, no shallots for making compote...vanilla! I have a few dried out beans that I've been hoarding! Now that we have a supply of fresh beans, time to use the old - why not drop one in the cranberry sauce? How bad could it be? OMG.....it was divine!!! Vanilla sugar adds extra vanilla flavr but you can certainly use regular sugar.

Vanilla Cranberry Sauce image

Steps:

  • Put all ingredients in a medium saucepan & bring to a boil.
  • Simmer about 10 minutes, stirring occasionally. Pull out the vanilla bean, slice open & scrape the seeds into the sauce. Add the bean back to the sauce & continue simmering & stirring occasionally until cranberries have popped.
  • Cool & serve or refrigerate. Remove bean just before serving.

1 lb fresh cranberries
1 cup water
1 cup vanilla sugar
1 vanilla bean, old, dried out ones work well here

This is the only cranberry sauce that I have found that I like. It is my grandmother's recipe. This is the original recipe. I am going to modify this year to do whole berries and just pare the apples ahead of time.

Grandma's Cranberry Sauce image

Steps:

  • Cut up 3 medium apples with peeling. Put in kettle with cranberries and water.
  • Boil until skins pop.
  • Push cranberries through fine sieve into bowl to capture the skins of cranberries and apples.
  • Add sugar to bowl and then put back to boil. Cook for 5 minutes. Pour into bowl.
  • Let Cool before putting saran wrap on and putting in fridge.

3 medium apples (I use granny smith)
1 lb cranberries, washed and picked over
1 1/2 cups water
3 cups sugar (my grandma's original recipe but I have cut mine down to 2 cups)
