BRATTENS FAMOUS CLAM CHOWDER
Smooth, creamy, and OMG so good! This recipe comes from Brattens which used to be located in Salt Lake City, Utah, years ago. It's been gone for years, but this clam chowder lives on. What a legacy! The restaurant gave me the recipe back in the middle 60's.

Steps:
- Put the prepared vegetables in a saucepan.
- Drain juice from clams and pour over the vegetables.
- Add enough water to BARELY cover.
- Simmer, covered over medium heat till barely tender.
- (DO NOT overcook!).
- In the meantime, melt butter in another medium saucepan.
- Add flour.
- Blend and cook, stirring constantly; add the cream.
- Cook and stir with wire whip, until smooth and thick.
- It is important that you stir constantly while cooking.
- Add undrained vegetables, clams and vinegar.
- Heat through, but do not boil again.
SHEPHERD'S PIE
This must be cooked with lamb mince (shepherds looked after sheep = shepherds pie + lamb/ mutton mince! cottagers looked after cows = cottage pie + beef mince). This is also a great way to use up the leftover Sunday Roast if you have a mincer, as you don't have to cook the mince before it goes in the oven. I said that it takes 1 hr to prepare, but this is for uncooked mince. 10 minutes for cooked mince, just combine it in the dish and put the potatoes on top and pop it in the oven! This can either be served with salad, or hot veggies.

Steps:
- Brown the lamb mince, and then add the onions and carrots.
- Boil the potatoes.
- Combine the lamb, gravy and Worcestershire sauce in a tall round pie dish.
- When the potatoes are cooked, mash them with butter and a small amount of milk and cover the top of the pie dish with the potato.
- Scrape the top with a fork to create lines across the top (this makes the potatoes lovely and crusty).
- Cook in the oven for 20- 30 minutes.

CROATIAN BOILED FISH (AND SOUP)
This is very old recipe from Dalmatia. The difference between regions in Dalmatia is that some put vegetables in a soup same not. I'm going to give you the simplest recipe, ingredients "sine qua non" as old Romans would have said. Using water you've cooked fish you can make nice soup. Just add cooked rice, olive oil and fresh parsley, filter the soup and you have it - nice and tasty.

Steps:
- Use large pot with low rim and add water. Put onion, garlic, bay leaves, pepper (use whole black pepper berries) and cook 20 minutes until onion is soft (you can crush garlic).
- In the meantime clean the fish (do not chop the fish; it must stay in one piece). Add salt, vinegar, olive oil and fish in boiling water and cook for about 5 to 20 minutes (it depends how large fish is).
- To serve, take out the fish and put it on a plate with cooked potato. Cover with additional olive oil and eat it.
- For the soup: cook rice, filter the water, and add parsley and olive oil and you have a soup.

CROATIAN MUTTON SOUP
This is my favourite soup. Mutton soup is usually served during grape-gathering in Dalmatia because it gives you extraordinary strength and energy which you need during hard work in vineyards. We also eat meat we cook in soup, usually with tomato salsa (see recipe in Zaar - "Island Hvar salsa") and mashed potato. I had this excellent meal just two weeks ago. It was prepared by my neighbour who is wine producer in village Vrboska on island Hvar, just one week before grape-gathering.

Steps:
- Put cold water in a pot (appropriate large pot). If you want better soup put mutton in cold water, if you want better mutton meat put it in hot water.
- Rind carrots, onion, parsley, celery and put all other ingredients into water. Boil and after it boils reduce heat and cook for 3 to 4 hours.
- Filter the soup into separate pot.
- If you want, put into strained soup carrots, add noodles or whatever you like in soup, sprinkle with freshly minced parsley and serve.
