SLOW COOKER SALMON LOAF

As a stay-at-home mom with two small children, I'm always looking for quick, easy recipes that can be prepared ahead of time. I also don't like to heat up my oven during our hot Georgia summers. I adapted this recipe from one I found in an old slow-cooker book of my grandma's. I serve it with macaroni and cheese and pinto beans. -Kelly Ritter, Douglasville, Georgia

Slow Cooker Salmon Loaf image

Steps:

  • Cut three 20x3-in. strips of heavy duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker coated with cooking spray., In a large bowl, combine the first five ingredients. Add salmon and mix well. Gently shape mixture into a round loaf. Place in the center of the strips., Cover and cook on low for 4-6 hours or until a thermometer reads 160°. Using foil strips as handles, remove the loaf to a platter.

2 cups seasoned stuffing croutons
1 cup chicken broth
1 cup grated Parmesan cheese
1/4 teaspoon ground mustard
1 can (14-3/4 ounces) salmon, drained, bones and skin removed

MAPLE SALMON

This is the best and most delicious salmon recipe, and very easy to prepare. I love maple in everything and put this together one night. My husband totally loved it; he did not like salmon that much until he had this.

Steps:

  • In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  • Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Steps:

  • 1. Place salmon pieces in the crock pot. 2. Mix the sauce ingredients and pour over salmon. 3. Cover. Cook on High for 1 hour. (increase to approx. 2 hours if using frozen fish) Note: This salmon is good hot or cold. Serve hot over rice, or crumble over salad or pasta cold. YUM!

6 Salmon fillets (fresh or frozen)
1/2 c. maple syrup
1/8 c. lime juice
1/4 c. soy sauce
2 tsp. crushed garlic
1 tsp. minced ginger root (I keep it in the freezer and grate it frozen. Very convenient!)
