CROCK POT PORK CHOPS WITH APRICOTS AND PRUNES

Dried fruits, such as apricots and prunes, have a lot of iron, and the iron is more readily absorbed when combined with vitamin C. This dish has it all. A nice dish to come home to.

Crock Pot Pork Chops With Apricots and Prunes image

Steps:

  • In large skillet, heat oil over medium-high heat; brown pork chops.
  • Transfer to crock pot.
  • Add onions, garlic, apricots and prunes to pork chops.
  • Whisk together orange juice, chicken stock, cumin, paprika, coriander, cinnamon, salt and pepper; add to crock pot.
  • Cover and cook on LOW for 6 to 8 hours, or until meat is tender.
  • Remove pork chops to plate and keep warm.
  • Increase heat to High; cover and cook for about 5 minutes or until sauce is slightly thickened.
  • Serve with chops.

Steps:

  • Cut each squash half into 3 wedges; place in slow cooker. Top with onions, garlic and chops. Mix broth, jam, mustard, thyme and pepper until blended; pour over chops. Cover with lid.
  • Cook on LOW 5 to 6 hours (or on HIGH 2-1/2 to 3 hours). Transfer chops and vegetables to platter; cover to keep warm.
  • Skim and discard excess fat from liquid in slow cooker. Add enough water to reserved liquid to measure 1-3/4 cups; pour into medium saucepan. Mix cornstarch and 1/4 cup cold water until blended. Add to liquid in saucepan; mix well. Bring to boil on medium heat, stirring constantly; cook and stir 1 min. or until thickened. Spoon over chops and vegetables.

The pork chops are stacked in the crock pot, so I think you could substitute a small pork roast and get pretty much the same results. Have not tried this but have tried the pork chops and they are great! If you use a roast, please let me know how it turns out.

Steps:

  • Place pork in 4-5 quart crock pot slow cooker.
  • Layer dried fruit evenly over pork.
  • Mix brown sugar, marmalade, vinegar, ginger and nectar,.
  • Pour evenly over pork and fruit in crock pot.
  • Cover and cook on low heat setting 6-7 hours or until pork is slightly pink when cut near bone.
  • Remove pork and fruit from crock pot with slotted spoon, Cover and keep warm.
  • Pour juices from slow cooker into 1 quart saucepan.
  • Mix cornstarch and water.
  • Stir into juices in saucepan.
  • Cook over high heat 4-6 minutes , stirring constantly, until thickened and bubbly Serve with pork and fruit.

Steps:

  • Preheat oven to 350°F.
  • Pat chops dry and season with salt. Dredge in flour, shaking off excess. Heat oil in a 3 1/2- to 4-quart wide heavy pot over moderately high heat until hot but not smoking. Brown chops in batches, turning over once, about 5 minutes per batch. Transfer to a plate. Add shallot to pot and sauté until golden, 2 to 3 minutes. Add vinegar and boil, scraping up brown bits, until reduced by half. Stir in water, broth, and allspice and bring to a simmer. Return chops to pot with prunes. Braise, covered, in middle of oven until chops are very tender, about 45 minutes. Transfer to a platter using a slotted spoon. Boil sauce until reduced to 1 cup, about 20 minutes. Season with salt and pepper and pour over chops.

  • Mix the apricot preserves, wine, and ground ginger together in a small bowl; set aside.
  • Season the pork chops with salt and pepper. Heat the olive oil in a skillet over medium high heat.   • Place apricots in a food processor or blender; cover and process until coarsely chopped. In a large skillet, brown pork chops in butter over medium-high heat. Add apricots. Bring to a boil.   • In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking, in it brown the pork chops, patted dry and seasoned with salt and pepper, and transfer them to a plate. Add 1 tablespoon of the butter to the skillet and in it cook the shallot, the cumin, the ground coriander, the zest, and the gingerroot over moderately low heat, stirring, until the shallot is softened.
