Steps:

  • Place cut up steak in bottom of crock pot.
  • Cover with sliced onion.
  • Mix taco seasoning and water and pour over.
  • Dump in salsa and green chilies.
  • Cook on low 6-8 hours.
  • Put corn chips in bottom of bowl and cover with chili.
  • Top with cheese.

This Slow Cooker Texas Chili may be a little different than you're used to! We've added beans and tomatoes for a filling and delicious soup. You can't go wrong with chili on a cold day!

Steps:

  • In a large saucepan, brown ground beef and diced onion.
  • Drain the grease from the meat and add meat to slow cooker.
  • Pour remaining ingredients on top and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  • Serve with shredded cheese, sour cream, green onions, and a bag of Fritos corn chips - or any of your other favorite chili toppings.

1 onion (diced)
2 green bell peppers (diced)
1 (4 ounce) can diced green chili peppers (drained)
1 (14 ounce) can beef broth
1 (15 ounce) can pinto beans (drained and rinsed)
1 (14 ounce) can diced tomatoes (do not drain)
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 teaspoons minced garlic
1 Tablespoon cumin
2 Tablespoons chili powder
1 Tablespoon sugar

  • In a large Dutch oven, heat 2 tablespoons vegetable oil over medium-high heat. Brown half of the beef (about 10 minutes); remove to a plate. Repeat with the remaining beef; remove to a plate. Drain off the excess liquid and fat, but leave the browned bits in the bottom of the Dutch oven.
  • Add 1 more tablespoon of vegetable oil to the pot and heat over medium heat until shimmering. Stir in the onion and jalapeño pepper (if using), cooking until the onions are softened, about 5 minutes. Add the garlic, chili powder, cumin and oregano; cook and stir until fragrant (about 30 seconds). Stir in the broth, scraping up any browned bits from the bottom of the pot. Return the browned beef to the pot, and stir in the crushed tomatoes, tomato paste, and sugar.
  • Bring the chili to a boil, then reduce the heat to low. Simmer over very low heat for a total of about 3-3 ½ hours (or until beef is fall-apart tender). I prefer to simmer the chili uncovered for the first two hours so that it’s nice and thick, and then put the cover on the pot for the last hour or so. Stir the pot occasionally as it simmers, and add more broth to thin to desired consistency (if necessary).

  • In 12-inch nonstick skillet, heat 1 1/2 teaspoons of the oil over medium-high heat; season beef with salt and pepper. Add half the beef to heated skillet; cook 4 to 6 minutes or until brown on at least two sides. Transfer beef to 3 1/2- to 4 1/2-quart slow cooker. Add 1 1/2 teaspoons of the oil to skillet; repeat for remaining beef.
  • Add remaining 1 tablespoon oil to skillet; cook onion in oil 2 to 3 minutes, stirring frequently, until starting to brown and softened. Stir in garlic; cook 20 to 30 seconds or until fragrant. Transfer mixture to slow cooker.
  • Add diced tomatoes, green chiles, chipotle chile, water, cornmeal and cumin to slow cooker; stir to combine. Cover and cook on Low heat setting 8 to 9 hours or until beef is tender. Serve with remaining ingredients as toppings.

  • In a large skillet, heat oil over medium-high heat. When hot, add meat in a single layer (you’ll need to cook it in batches). Brown for 1-2 minutes on each side and then move to slow cooker. Continue this process, adding more oil to pan if needed, until all meat is browned and in slow cooker.
  • In the same pan, add onions, celery, jalapeño, salt, and pepper. Saute until celery is softened and onion is translucent. Add garlic and continue to cook for 1-2 minutes or until fragrant.
  • Add chili seasoning, brown sugar, and oregano and continue to cook, stirring, until fragrant (1-2 minutes). Add tomato paste and stir to coat vegetables with tomato paste. Keep stirring to prevent burning. Add beer and cook for 4-5 minutes or until slightly reduced. Add this mixture to the slow cooker.
  • Add crushed tomatoes, diced tomatoes, and bay leaf. Stir to combine all ingredients. Cover and cook on low for 6-8 hours or until meat is tender.
