Simple Crostini image

Steps:

  • Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
  • Bake, rotating sheets halfway through, until golden, 15 to 20 minutes (if undersides are not browning, turn crostini over once during baking). Let cool on baking sheets. Top crostini with desired toppings, and serve.

1 baguette (8 to 10 ounces), sliced 1/4 inch thick (about 60 slices)

Found this in a old BGH magazine. I made this for dinner one night and DH loved it. Takes no time to make and very filling. I used italian bread for this. If using both sides of bread just double ingredients.

Steps:

  • Perheat over to 350°F Remove edible rind from Brie cheese, if desired, using a vegtable peeler. Cube sheese, set aside.
  • Split French bread in half horizontally. Hollow out one of the bread halves, leaving a 1/2 inch shell. Place hollowed bread half, cut side up, on a large baking sheet; set aside. (save remaining bread for another use).
  • In a medium bowl combine tomatoes, ham, Brie, oil, garlic, and oregano. Toss to combine. Spoon into hollowed out bread half. Sprinkle with finely shredded cheese. Bake about 15 minutes or until heated through. Drizzle with vinegar. To serve cut crosswise.

1 1/2 cups plum tomatoes (coarsely chopped)
6 ounces ham (about 1 cup) or 6 ounces prosciutto (about 1 cup)

1 teaspoon garlic, minced (or 2 cloves,minced)
1 teaspoon dried oregano
1/2 cup Italian cheese blend (finely shredded)
2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the slices of ciabatta on a parchment lined baking sheet. Bake until crisp and golden around the edges, about 8 minutes. Remove the bread from the oven. Place the prosciutto slices and mozzarella on the crostini toast and return to the oven to melt the cheese, about 8 more minutes.
  • Meanwhile combine the butter and the sage leaves in a small saucepan over medium heat. Cook until the butter is melted and starting to brown in spots and the sage leaves are crisp, about 5 minutes. Add the salt and pepper.
  • Remove the baking sheet from the oven. Transfer the crostini to a serving plate. Drizzle the crostini with the sage butter and serve immediately.

12 1/2-inch thick slices ciabatta bread
12 slices thinly sliced prosciutto (about 6 ounces)
1 pound fresh mozzarella, cut into thin slices
3 tablespoons butter
6 sage leaves
Pinch salt
Pinch freshly ground black pepper

  • Preheat the oven (or a gas grill*) to 450 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean-up, if desired. If your baking sheet is smaller than mine, you may need to make the toast in two batches.
  • Slice your baguette on the diagonal into pieces no wider than ½-inch. I can usually fit 20 to 24 slices on my large baking sheet; you might have some bread left over. Lightly brush both sides of each slice with olive oil (this will require about 2 to 3 tablespoons oil).
  • Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 6 to 9 minutes, until they’re crisp and nicely golden on top. Sprinkle the toasts lightly with salt. Transfer the toasts to a serving platter, if desired, and use as desired.
