HERB-CRUSTED BREAD

Minced onion and garlic plus a sprinkling of dill help perk up the flavor in this wholesome rustic-looking loaf. "The dough mixes up easily in a bread machine," comments Becky Steinberger of Denmark, Wisconsin. "I like to serve this crusty bread alongside soup, pasta and saucy tomato dishes."

Herb-Crusted Bread image

Steps:

  • In a blender, process oats until finely ground. In bread machine pan, place the oats, water, sugar, oil, salt, flours, yeast and seasonings in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When the cycle is completed, turn dough onto a lightly floured surface. Shape into a loaf, about 15 in. long. Transfer to a baking sheet coated with cooking spray. Cover and let rise in a warm place until doubled, about 45 minutes., Carefully brush dough with egg, sprinkle with salt, onion, garlic, dill and poppy seeds. Bake at 350° for 25-30 minutes or until golden brown.

CRUSTY ONION HORSERADISH & GARLIC BREAD LOAF image

Steps:

  • 1. Preheat oven to 450 degrees F. I made this crusty and flavorful bread loaf to compliment my Vegetable with Beef and Orzo Soup. It was a great addition to the soup. Spray a large shallow baking pan or cast iron skillet with non stick cooking spray and set aside till needed. Some of the ingredients used to make the bread loaf.
  • 2. Sift flour into a large bowl then make a well in the center of it adding the salt, sugar & baking soda.
  • 3. Then add the horseradish chopped green onion tops, granulated garlic, egg and buttermilk.
  • 4. Then with a spoon or by hand gradually begin to blend the spices into the flour mixture, with the wet ingredients until the dough comes together.
  • 5. Dough may tend to be a little sticky. Add enough extra flour just until it holds together. Then shape into desired shape and place on baking pan or in skillet. I chose to make it like a loaf this time. With a serrated knife make a long X across bread about 1 1/2 inches deep so that the steam can escape as the bread cooks.
  • 6. Bake in preheated 450 degrees F oven for 15 minutes then REDUCE THE TEMPERATURE TO 400 DEGREES AND CONTINUE TO BAKE FOR AN ADDITIONAL 30 MINUTES OR UNTIL BREAD SOUNDS HALLOW WHEN TAPPED ON THE BOTTOM.
  • 7. Remove from oven and spray with butter flavored cooking spray or brush top with softened butter if desired. I find it much easier to slice bread using an electric knife. Add softened butter while bread is warm if desired.

Steps:

  • Heat the oven to 400 degrees. In a small bowl, stir together the butter, garlic, Parmesan and parsley. Add the salt and generously season with pepper. Set aside while you cut the baguette.
  • Cut deep slits into the baguette, 1-inch apart - don't cut all the way through the loaf - and place the baguette on a large piece of foil. Using a teaspoon or an offset spatula, generously spread the seasoned butter inside each slit. Make sure to reach the bottom of the slit; don't be shy here.
  • Wrap the baguette in the foil, place on a baking sheet and bake for 15 minutes. Remove the baguette from the oven and unwrap the top (leave the bread on the foil). If you're adding mozzarella, use the offset spatula or spoon to gently open each slit and tuck a piece of mozzarella in (it's O.K. if the cheese pops out from the top a little). Return bread to the oven and bake until crisp and golden on top, another 5 minutes. Slice with a serrated knife (or tear with your hands) and serve at once.

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, combine the garlic and oil, mix well.
  • In another bowl, combine parsley, thyme, marjoram and paprika.
  • Add Parmesan; mix well.
  • Cut each loaf crosswise into diagonal slices, without cutting all the way through.
  • Brush cut sides of slices with garlic oil.
  • Sprinkle herb mixture between slices.
  • Wrap each loaf in foil, place on a baking sheet. Bake until heated through, about 10 to 15 minutes.
  • Unwrap the loaves and place them on a breadboard or in a basket. Serve immediately.
  • FREEZER Follow the recipe through step 2, but wrap each loaf in plastic wrap and then in foil.
  • Freeze up to 1 month.
  • To heat, preheat oven to 350°F.
  • Remove foil and plastic wrap from loaves; rewrap in foil.
  • Place on a baking sheet and bake until heated through, about 25 to 30 minutes.
