Steps:
- Melt the butter in a skillet over medium heat. Add the bananas. Cook until browned on both sides.
- Combine the brown sugar and cinnamon in a bowl. Sprinkle over the bananas. Stir in the sherry. Simmer, covered, for 4 minutes or until the bananas are tender. Serve with/on vanilla bean ice cream.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly butter a 9x13 inch casserole dish.
- Cover the bottom of the prepared casserole dish with half of the banana slices. Sprinkle the bananas with half the brown sugar, butter pieces, pecans, and raisins. Form another layer with the remaining banana slices and repeat layering with remaining brown sugar, butter, pecans, and raisins.
- Bake in preheated oven for 30 minutes; remove from oven and cool for 5 minutes. Sprinkle brandy over top of dish to serve.

- Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.

- Preheat the oven to 400 degrees. Peel the bananas and slice in half lengthwise. Lay the pieces into a buttered 9-by-13-by-2-inch ovenproof dish. Pour the lime juice and rum evenly over the bananas. Sprinkle on the cinnamon, nutmeg, and brown sugar. Dot on the butter, if using, and bake for 10 to 15 minutes. Serve hot, topped with a tablespoon of fresh cream or ice cream.
