SLOW-COOKER CHIPOTLE-ORANGE PORK TACOS

You can serve this warmly spiced, slow-cooked pork in its entirety for a crowd, or treat it as a "nextover" and turn the extra servings into a brand-new dinner later in the week.

Slow-Cooker Chipotle-Orange Pork Tacos image

Steps:

  • Rub pork all over with 2 Tbsp. salt. Let sit at room temperature 10 minutes.
  • Meanwhile, mix oregano, brown sugar, chili powder, cinnamon, orange zest, and remaining 2 tsp. salt in a small bowl. Rub all over pork, then transfer pork to slow cooker insert. Add orange juice, lime juice, and garlic, then toss to coat. Cook on high 8 hours or on low 10 hours until pork is super-tender and falls apart easily when raked with a fork.
  • Using tongs, transfer pork to a rimmed baking sheet and let cool slightly. Strain juices left in slow cooker through a fine-mesh sieve into a large heatproof measuring cup or bowl. Let sit 10 minutes, then spoon off and discard fat. Transfer 1/2 cup juices to a resealable container and chill to use in Chile-Orange Pork Stir-Fry.
  • Using 2 forks or tongs, shred meat into bite-size pieces, discarding any larger pieces of fat. Transfer 2 cups meat to a resealable container and chill for Chile-Orange Pork Stir-Fry, or reserve for another use. Return remaining meat (you should have about 6 cups) to slow cooker along with 1 cup strained juices. Keep warm until ready to use.
  • Serve shredded pork with tortillas, sour cream, cilantro, onions, and hot sauce for assembling tacos.
  • Do Ahead
  • Pork can be marinated 1 day ahead. Cover slow cooker insert with plastic and chill. Pork can be cooked 3 days ahead. Shred, then chill in an airtight container along with juices; rewarm gently before serving.

1 (6-lb.) skinless, boneless pork shoulder roast, preferably untied
2 Tbsp. plus 2 tsp. kosher salt
2 Tbsp. dried oregano

  • MOP SAUCE: Combine all ingredients in a nonreactive bowl and stir until salt and brown sugar are dissolved. Baste pork after 1 hour and repeat every 1 hour. Pour remaining sauce over pork in pan or serve on the side. VINEGAR SAUCE: Combine all ingredients in a nonreactive bowl and stir until brown sugar is dissolved. Transfer to sterile jars and store in refrigerator, it will keep for several months. Serve on the side of pulled pork.

Vinegar Sauce:
1 cup cider vinegar
1 small onion, sliced
1-2 jalapeno peppers, thin sliced
1 tablespoon coarse salt
1/2 cup water
1 tablespoon brown sugar {.5oz}
1 teaspoon black pepper
1 teaspoon red pepper flakes
2 cups cider vinegar
3 tablespoons ketchup {1.5oz}
2 tablespoons brown sugar {1oz}
4 teaspoons coarse salt
1 tablespoon Tabasco or other hot sauce
1-2 teaspoons red pepper flakes
1-2 teaspoons black pepper

Cuban Pulled Pork Tacos with Guava Glaze, Sour Orange Red Cabbage-Jicama Slaw and Chipotle Mayonnais Recipe image

Steps:

  • 1. Special equipment: roaster box with probe thermo- meter, such as La Caja China; sufficient charcoal to cook pork butt for 4 to 5 hours (about 30 pounds) 2. For the pork: Using a paring knife, make small slits over the entire surface of the pork. Put the pork in a large roasting pan or bowl. 3. Combine the oil, oregano, garlic and a big pinch of salt in a blender and blend until smooth. 4. Rub into the slashes. Cover and refrigerate at least 8 hours and up to 24 hours. 5. Whisk together the guava jelly, mustard, orange and lime juices in a bowl and season with salt and pep- per. 6. Prepare the roaster box according to manufacturer's instructions. 7. Sprinkle the pork liberally with salt and pepper and put fat-side up on the rack over the roasting pan in the roaster box. 8. Cook for 1 hour, flip, and cook another 2 hours. 9. Glaze the top with the guava mixture, flip, glaze again, cover the box and cook another 30 minutes, or until the internal temperature of the pork is about 195 degrees F. You can check the meat occasionally to make sure the glaze on the top of the meat isn't burning, so you can add sufficient charcoal to keep the box hot without burning the glaze. Total cooking time will be between 4 and 5 hours. 10. Remove the pork, tent lightly with foil and let rest 15 minutes. Pull the pork into bite-size pieces and toss with more of the guava glaze. 11. Lay the warm tortillas on a flat surface. Smear some Chipotle Mayonnaise on each one. Fill the center with some of the pork, some of the Sour Orange, Red Cabbage and Jicama Slaw and top each with some cilantro leaves. Fold over and eat. Chipotle Mayonnaise: 3/4 cup mayonnaise 2 tablespoons pureed chipotles en adobo Juice of 1/2 lime Whisk the mayonnaise, pureed chipotles en adobo and lime juice together until smooth. Sour Orange, Red Cabbage and Jicama Slaw: 1/2 cup fresh orange juice 1/4 cup fresh lime juice 2 tablespoons honey 1 tablespoon granulated sugar 1/2 jicama, grated on large holes of box grater 1/2 small red onion, grated on large holes of box grater 1/4 head red cabbage, grated on large holes of box grater 1 large carrot, grated on large holes of box grater 3 tablespoons chopped fresh cilantro Salt and freshly ground black pepper Whisk together the orange juice, lime juice, honey and sugar in a large bowl. Add the jicama, onions, cabbage, carrots and cilantro and season with salt and pepper. Refrigerate for at least 1 hour before serving to allow flavors to meld.
