CUCUMBER-BASIL AGUA FRESCA

Steps:
- Slice a few thin slices of cucumber; reserve for garnish. Peel and coarsely chop remaining cucumber.
- Purée chopped cucumber, lime juice, basil, 1/4 cup sugar, and 2 cups water in a food processor until very smooth. Strain into a pitcher and add 2 cups water, adding more sugar or water if needed, then chill until ready to serve. Add reserved cucumber slices just before serving.
AMAZING CUCUMBER BASIL SALAD
I created this salad because I had lots of fresh veggies and herbs from my garden that needed using up. It is so good, and because it makes its own dressing, it's very healthy as well. The flavor is best when left in the fridge overnight.

- Run spinach and basil through a food processor until finely chopped.
- Mix spinach mixture, tomatoes, cucumbers, red onion, garlic, salt, and pepper together in a large bowl with an air-tight lid. Cover bowl and refrigerate salad, 8 hours to overnight.

- Peel one of the cucumbers, cut it in half, and then cut each half in half lengthwise. Scoop seeds out with a spoon, discard, and dice cucumber.
- Put cucumber puree through a fine mesh sieve over a bowl and push with a wooden spoon or spatula, extracting as much liquid as you can from the cucumber puree. You should be able to get about 3/4 cup.
- Pour cucumber juice into a large pitcher with 3/4 cup lemon juice, water, and granulated sugar. Stir in vodka if using. Slice remaining half cucumber and add cucumber slices, lemon slices, and fresh basil to pitcher.

- Prepare the cucumbers. Peel the cucumbers, cut them in half horizontally and then lengthwise. Starting at one end, hold a spoon, round side up, and gently scrape downwards, to remove the seeds. Chop the cucumbers into several large chunks and place them in a powerful blender or a food processor fitted with the blade attachment.
- Blend all of the ingredients. Add the water, lemon juice, garlic, onion, basil leaves, salt, sugar and a few turns of black pepper. Blend until you have a smooth mixture and then pour the soup into a large bowl.
