ROASTED LEG OF LAMB WITH MINT AND CUCUMBER YOGURT

Roasted Leg of Lamb with Mint and Cucumber Yogurt image

Steps:

  • In a large bowl, mix together the shallots, garlic, rosemary, sugar, coriander, salt, and chile flakes. Rub the mixture on the surface of the lamb. Set the lamb in a large glass baking dish; cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 375 degrees F.
  • Rinse the lamb and pat it dry. Heat a roasting pan or large ovenproof skillet over medium heat. Brown the lamb on both sides.
  • Set the lamb on a roasting rack in the pan and roast, fat side up, until it reaches an internal temperature of 140 degrees F, about 1 1/2 hours. Transfer to a platter. Set the pan over medium heat and add the stock, scraping the pan drippings to dissolve them in the broth. Simmer until reduced by half.
  • Serve the lamb with the reduced pan sauce, Tzatziki Sauce, and grilled vegetables such as eggplant, zucchini, and yellow squash tossed with red wine vinegar and olive oil.
  • Stir together all the ingredients in a medium bowl until thoroughly combined.

2 cups vegetable or chicken stock
Tzatziki Sauce, recipe follows
2 cups plain yogurt
Juice of 2 lemons
1 cucumber, peeled and diced
3 tablespoons chopped fresh mint
1 tablespoon minced garlic
1 tablespoon minced shallots

This refreshing version of mint mojitos features a springtime kick of cucumber. We love these at special gatherings and summer barbeques. A pitcher of this can be made a few hours in advance--just add alcohol at serving time.

Mint-Cucumber Mojitos image

Steps:

  • Squeeze the lime quarters into a highball glass, and drop the limes into the glass. Add the mint leaves and sugar. Muddle well with the back of a spoon or with a muddler. Place the cucumber slices into the glass, and fill with ice cubes. Pour in the rum, then top off with club soda. Stir gently and serve.

Grilled Spiced Lamb Chops with Cucumber-Mint Sauce image

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Brush lamb on all sides with curry paste. Let stand 15 minutes.
  • Toast cumin seeds in small skillet over medium heat 1 minute. Place seeds in resealable plastic bag; coarsely crush with rolling pin. Mix cumin, yogurt, cucumber, and mint in small bowl.
  • Grill or broil lamb chops until charred outside and pink inside, about 3 minutes per side. Serve with cucumber-mint sauce on the side.

Steps:

  • Peel the cucumber and coarsely grate the sides, discarding the seeds. Season generously with salt. Tip into a colander or sieve and leave for 10 mins to drain, then squeeze out as much liquid as you can and tip into a bowl.
  • Tip the remaining ingredients into a mini chopper or food processor and blitz. Pour the sauce over the cucumber and stir, then chill until needed. Serve scattered with mint.

  • Wrap grated cucumber in kitchen towel and squeeze dry. Whisk yogurt, mint, cumin, and 1/4 teaspoon cayenne pepper in medium bowl to blend. Add cucumbers and toss to coat.
