- Cut watermelon into workable pieces. Remove the seeds and the rind. Puree the watermelon in a blender or food processor. Pour the puree into ice cube trays and freeze.
WATERMELON-LIME COOLER
While coolers are often stretched with something sparkling, this rose-hued drink swaps in a pour of fresh watermelon juice. The inherent sweetness - and deep pink color palette - of both the juice and the Lillet Rosé is tempered with an ounce of gin and a splash of lime's bright acidity. (If you can't find Lillet Rosé, use Lillet Blanc or even a blanc vermouth in a pinch.)

- Add some Tajín to a shallow small plate. Run a lime wedge around the rims of your serving glasses, then dip the rims lightly in the Tajín. Set the glasses aside until ready to use.
- Add the frozen watermelon chunks, lime juice and water to a blender. Cover and blend until smooth, adding in more water as needed to get the blender going and achieve a thick slushie consistency.
- Pour the mixture into your serving glasses, top each with a slice of lime for garnish if desired, then serve and enjoy!

- To make watermelon juice, scoop half a small watermelon into a blender and puree until well blended. Then strain through a fine mesh strainer and place juice in a jar. Refrigerate until ready for use.
- To make watermelon ice cubes, cube the other half of the watermelon into ice cube-sized pieces and place on a baking sheet. Make sure they're not touching of they'll stick together. Freeze for 4-5 hours or overnight or until very firm.
- To make margaritas, add watermelon juice, lime juice, tequila, and triple sec to a cocktail shaker or pitcher and shake vigorously or stir.
- Next, run the quarter of a lime around two serving glasses and then dip in margarita salt. Fill 3/4 of the way full with watermelon ice cubes (or regular ice cubes if preferred).

- In a strainer over a bowl, press the remaining chunks of fresh watermelon with a muddler or flat surface until most of the juice is extracted.
- Slice limes into quarters and squeeze the juice of one fruit into each serving glass, throwing the limes into the glass along with it. (Only use half of a lime instead of 2 medium limes if you prefer a drink that's not as tart.)
