Cranberry-Orange Nut Bread image

Steps:

  • Preheat oven to 350°F.
  • Grease bottom of 9 x 5 x 3-inch loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda; cut in the butter until crumbly.
  • Add orange peel, orange juice and egg, and stir just until moistened.
  • Mix in cranberries and nuts; pour into prepared pan and bake 55 to 65 minutes, or until wooden toothpick inserted in center comes out clean.
  • Cool completely before cutting.

2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter, softened
1 tablespoon orange zest
3/4 cup orange juice
1 egg

Cranberry-Orange Nut Bread image

Steps:

  • Preheat oven to 350 degrees. Grease a 9X5 inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In a medium sized bowl, combine the orange juice, zest, buttermilk, egg and vegetable oil.
  • Add the wet ingredients to the dry ingredients and mix until combined. Stir in the cranberries and nuts, then pour batter into loaf pan. Bake for 55 to 65 minutes, or until tester inserted in the center of the loaf comes out clean and the bread starts to pull away from the edges of teh pan. Remove it from the oven and let cool for 15 minute, then turn it out of the pan to cool completely on a rack.
  • The loaf will slice better if wrapped when cooled and left to rest overnight before serving.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. Whisk together flour, baking powder, baking soda, and salt. Stir in orange zest, cranberries, and pecans. Set aside.
  • In a large bowl, cream together margarine, sugar, and egg until smooth. Stir in orange juice. Beat in flour mixture until just moistened. Pour into prepared pan.

  • Preheat oven to 350*.
  • Slice cranberries.
  • In a large mixing bowl, combine dry ingredients.
  • In another bowl mix together juice, peel, butter, egg, clove and vanilla.
  • Combine dry and wet ingredients.
  • Mix until combined.
  • Fold in nuts and berries.
  • Pour into greased bread pan (only grease the bottom of the pan- not the sides. This avoids the bread from falling in the center which creates a"sad streak.") and bake 55-60 minutes.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Sift flour, white sugar, brown sugar, baking powder, baking soda, and salt together in a large mixing bowl. Mash butter into the flour mixture with a pastry cutter until the mixture resembles coarse cornmeal.
  • Stir orange juice, egg, vanilla extract, and orange zest together in a small bowl; add to flour mixture and stir just until the dry ingredients are moistened and batter-like.   • Preheat oven to 375°F and set an oven rack to the middle position. Spray a 9 x 5-inch loaf pan with non-stick cooking spray.
  • In a small bowl, stir together buttermilk, orange zest and juice, melted butter and egg. Set aside.
  • In a large bowl, whisk together flour, sugar, salt, cinnamon, baking powder and baking soda. Stir the liquid ingredients into the dry ingredients with rubber spatula until just moistened. Gently stir in cranberries and nuts. Do not overmix.
  • Scrape the batter into the prepared loaf pan and spread evenly with a rubber spatula. Bake for 20 minutes, then reduce the heat to 350° F. Continue to bake until golden brown and a toothpick inserted into center of the loaf comes out clean, about 45 minutes longer. Cool the loaf in the pan for about 10 minutes, then turn out onto the rack and cool at least 30 minutes before serving.
