CURRY DIP FOR CRUDITES

This curry dip is fantastic with crudites and/or chips. My latest idea is mixing it with my albacore tuna instead of mayo. Mouth-wateringly good. Tastes even better the next day.

  • Cut chutney into small pieces, if necessary.
  • Stir together cream cheese, sour cream and curry (you can use more curry if you like things hot).
  • Sit in chutney.
  • Cover and refrigerate a minimum of 2 hours.
  • Top with additional chutney if desired.
  • Serve with crackers or vegetables.

  • Gently fry the onion and garlic in the oil for about 5 minutes until soft.
  • Add the curry powder and cook for another minute then allow the mixture to cool.
  • Spoon into a food processor with the yoghurt, chutney and seasoning.
  • Blend until smooth.
  • Stir in the parsley and refrigerate before serving with crudites and bread.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

  • Bring cream chees to room temp. Combine with other ingredients and stir til well blended. This recipe tastes best if left to rest and let the flavors blend. Make a horizontal cut taking 1/3 of the pineapple off. Leave entire stalky part intact. Hollow out the bowl of the pineapple. Cut up the guts of the pineapple for dipping in the dip. Serve with crackers, I prefer "buttercrisps", but any cracker will do.

  • In a 4- or 5-quart electric slow cooker, combine all the ingredients.
  • Mix well.
  • Cover and cook on the low heat setting 4 to 5 hours, or until the fruits are tender but still retain their shape; do not overcook.
