Store-bought Massaman curry paste is used to marinate lean flank steak and create a rich pan sauce in this five-ingredient dinner.

- Season steak with salt and pepper. Brush with 1 tablespoon curry paste; let stand 10 minutes. Combine rice, 1 3/4 cups water, 1 tablespoon oil, and 3/4 teaspoon salt in a saucepan. Bring to a boil, then stir once, cover, and reduce heat to low. Simmer until rice is tender, about 15 minutes. Add white and light-green scallions; cover to steam.
- Heat a large cast-iron skillet over medium-high. Swirl in 1 tablespoon oil. Add steak; cook, flipping once, 7 to 9 minutes for medium-rare. Transfer to a carving board. Reduce heat to medium. Add 1 tablespoon oil and remaining 2 tablespoons curry paste to skillet; cook 1 minute. Add 3/4 cup water; cook until reduced to 1/2 cup, 30 seconds. Transfer to a bowl; cover. Wipe skillet clean; add remaining 1 tablespoon oil and heat over medium. Add snap peas, season with salt, and cook, stirring occasionally, until crisp-tender, 2 to 3 minutes. Fluff rice; stir in scallion tops. Slice steak against the grain; serve with rice, peas, and curry sauce.

- For the barbecue sauce: Heat the oil in a small saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until golden, about 6 minutes. Add the orange juice and simmer until slightly reduced, about 5 minutes. Add the ketchup, sugar and Worcestershire and return to a simmer. Cook until slightly thickened and the onions are tender, about 10 minutes. Puree until smooth in a food processor. Transfer to a bowl and cool completely.
- Make the kebabs: Cut the steak into approximately 1-inch cubes. If there are parts of the meat that are significantly thinner, cut those into longer pieces that can be folded together when skewered. Toss the steak with about 1/2 cup of the barbecue sauce in a medium bowl and marinate in the refrigerator at least 1 hour and up to 4 hours.
- Preheat the grill to medium-high. Skewer the meat, alternating with tomatoes, scallions, and orange pieces on ten 10- to 12-inch metal or wooden skewers. Sprinkle with salt and pepper. Set aside about 1/4 cup of the barbecue sauce and use it to brush all over the skewers. Reserve the remaining sauce for serving.
- Grill the skewers, turning 2 or 3 times, until well-marked and cooked to desired doneness, 5 to 6 minutes total for medium rare. Serve the skewers with the reserved barbecue sauce on the side. Any remaining barbecue can be kept refrigerated for up to 2 weeks.
CURRIED STEAK WITH ORANGE SAUCE & ORANGE GINGER STEAK SKEWER
In this recipe, a portion of the steak is cut into thin strips, skewered, and seasoned (or not) to the children's liking. The remaining portion of the steak is left whole and seasoned with a spicy rub or orange, curry, and ginger. The pan juices are deglazed with rice vinegar and orange juice concentrate to make a deliciously sweet and sour orange curry sauce. The kids liked their portions on skewers but wanted to try the adult variation too. This meal is inexpensive and quick-a great family meal.

- Cut about 1/2 pound of the steak across the grain into strips for the children. Thread the strips onto skewers.
- Mix together the orange peel, ginger, salt, and white pepper. Season the skewers with a little of the mixture, if desired, or any combination that suits the children's taste.
- Add the cumin and curry powder to the remaining mixture and rub onto the surface of the steak.
- Pan fry the skewers for 3 to 4 minutes on each side, until cooked through. Remove from the pan and keep warm.
- Pan fry the steak for 6 to 7 minutes on each side for rare or 8 to 9 minutes per side for medium to well done. Remove the steak from the pan.
- Deglaze the pan with the vinegar and orange juice concentrate. Cook for about 1 to 2 minutes, scraping the bottom of the pan. Cut the steak into thin slices diagonally across the grain. Pour the sauce over the slices to serve. Ser ves 2 adults and 2 or 3 children.

This recipe comes from the famous Hon's Wun-Tun House in Vancouver, B.C. The recipe is a favorite with many. This is a lengthy recipe to prepare, but is worth it.

- In a large cooking pot, add flank steak, cover with water and bring to boil.
- Remove from heat and allow steak to soak for 20 minutes.
- Remove beef from pot and rinse under cold water for 20 minutes.
- Cut cooled beef flank into 1 1/2 inch cubes.
- Using the same cooking pot, add ginger, garlic, and beef cubes and cook on medium heat for 5 minutes, stirring often.
- Add enough water to cover the meat with 2 inches of water and bring to boil.
- Reduce heat to medium and add curry paste, sugar and salt, and continue to simmer, uncovered for 30 minutes, stirring occasionally.
- Cover pot and continue to simmer for another 30 minutes, stirring occasionally.
- Add tomato, cover pot and continue to simmer for another 30 minutes.
- Add cubed potatoes, cover and continue to simmer for another 30 minutes, stirring occasionally.
- Serve over rice or noodles.
