CURRY MAYONNAISE

This is great for French fries, a base for chicken or shrimp salad, or to just dip vegetables or chips. We use it as a dip for shrimp cocktail instead of cocktail sauce. Let chill for 15 minutes before serving.

1 teaspoon curry powder
1/2 teaspoon yellow mustard powder
1 teaspoon water
1 teaspoon vinegar
1/4 teaspoon black pepper

These were made at the Soho Charcuterie, a popular restaurant in New York in the 1980's. They are the perfect combination of a bittersweet chocolate flavor with a chewy consistency, studded with pecans and chocolate chips.

Steps:

  • Preheat the oven to 325*F. Line two cookie sheets with parchment paper or grease them lightly with vegetable oil.
  • Melt the 8 ounces of semisweet and unsweetened chocolate and the butter in the top of a double boiler placed over simmering water. Allow it to cool slightly.
  • Sift the flour, baking powder, and salt together into a small bowl and set aside.
  • Using an electric mixer on medium speed, beat eggs, vanilla, and espresso powder in a medium bowl until they are mixed together, about 10 seconds.
  • Add the sugar to the egg mixture and blend it all until thick, about 1 minute. Scrape bowl.
  • Add the melted chocolate and blend 1 minute more. Now scrape the bowl again.
  • Add the flour mixture on low speed and mix until blended, 10 seconds. Fold in the chocolate chips and nuts by hand. Drop the dough by generously rounded tbsl. about 2" apart onto the prepared cookie sheets.
  • Bake the cookies until they rise slightly and form a thin crust, about 13 minutes. Immediately move the cookies from the cookie sheets to a wire rack to cool. Enjoy!

3 ounces unsweetened chocolate
6 tablespoons butter, room temperature (3/4 stick)
1/3 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

CHICKEN IN CURRY MAYONNAISE

An excellent dish for a picnic as you serve this cold. Comes from my handwritten book of tried and tested recipes, this is a firm family favourite in summer and is always requested, especially when we go on a picnic. Whilst the recipe states to use whole chicken pieces I find breaking the chicken into smaller pieces allows the sauce to penetrate each piece with a very tasty mild, curry mayonnaise flavour.

Chicken in Curry Mayonnaise image

Steps:

  • Season the chicken with salt.
  • place in a saucepan with the water and cook till done.
  • Set the chicken aside to cool off.
  • Saute the onions in the oil until soft.
  • Add the curry powder and vinegar and cook for 1 minute.
  • Add the apricot jam and simmer for about 5 minutes.
  • Remove from cooktop and set aside to cool off.
  • Arrange the chicken in a serving dish (or break into smaller pieces first).
  • Mix the mayonnaise with the cooled curry mixture and pour over the chicken.
  • Place in the refrigerator to chill.
  • Note: the flavour develops even better when you chill this overnight. Cooling time is not included in the timings.

  • First, in a mortar, grind the cumin, garlic and ginger.
  • Combine this mixture and all the remaining ingredients, except the oil and chutney.
  • Stir in the chutney last.
  • Very good over [2 7-oz cans solid white tuna, drained] tuna with 1/2 c chopped apple, 1/4 c scallions, 3 T chopped celery, 2 T currants and 1/3 c slivered almonds toasted in a 350 oven for 10-15 minutes.
