OLD-SCHOOL TAMALE PIE
Delicious, old-school, comfort food, this tamale pie recipe is perfect for fall or winter nights.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
- Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
- Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

YUMMY TAMALE PIE
I found this recipe in a cook book by Sandra Lee from the Food Network. I made a dish of this and it was almost instantly inhaled by my DH and DS. Very yummy! At times I have topped this with a dollop of sour cream and fresh cilantro.

Steps:
- preheat oven to 350.
- brown the meat breaking up all large crumbles.
- drain the fat from the meat.
- add the rotel and the salsa verde and stir well making sure everything is mixed.
- in a small bowl mix the cornbread mix and the cream corn just until moist and mixed.
- spoon the meat mixture into a 1 1/2 quart baking dish.
- top with the cornbread mixture, spreading it evenly over the meat.
- sprinkle the top with sliced black olives.
- bake for 40-50 minutes.
- during the last five minutes of cooking add the shredded cheese, and return to oven until cheese is melted.

SLOW COOKER TAMALE PIE
Steps:
- In a large skillet, brown ground beef over medium heat until no longer pink; drain excess grease.
- Stir in the cumin, salt, chili powder and pepper.
- Transfer to a slow cooker; stir in the beans, tomatoes, corn, enchilada sauce, onions and cilantro.
- Cover and cook on low for 6-8 hours or until heated through.
- In a small bowl, combine muffin mix and eggs; spoon over meat mixture. Cover and cook 1 hour longer or until a toothpick inserted near the center comes out clean.
- Sprinkle with cheese; cover and let stand for 5 minutes before serving.

D & D'S TAMALE PIE SO YUMMY
My sister and I have always loved tamale pie, but only had it at pot lucks. Our mothers version was from a box, and that was good too. Unfortunatly, they stopped making the kind in a box, at least they dont sell it here anymore. So with some trial and error we came up with this. Our families love it, and it is even better the next day. Very simple to make, and so tasty!

Steps:
- mix corn meal, milk, and egg in 13in glass baking dish.
- Brown meat and drain.
- to meat add chili seasoning,tomatoes, corn, olives (stir).
- pour meat mixture into cormeal mixture in baking dish.
- mix well.
- Bake at 350 degrees for about 1 hour and 20 minute.
- sprinkle cheese on top, and bake another 10 minute.
- Serve with salad and enjoy.

- Preheat the oven to 400 degrees F. Spray one 9 X 13-inch baking dish with nonstick cooking spray. Set aside.
- Filling: Heat a large skillet over medium heat. Add ground beef, onions, and red bell pepper and cook until beef is cooked through and onions are softened. Season with beef bouillon and all seasoning. Add garlic and sauté 30 seconds. Add corn, black beans, diced tomatoes, green chiles, tomato paste and beef broth and stir until well combined. Heat over medium heat to warm through then stir in cheese; set aside.
- Topping: Whisk together all the dry ingredients (masa harina, baking powder, salt) in a large bowl. In another bowl, beat the egg and chicken broth until combined, then mix that into the bowl of dry ingredients. Stir in the melted butter followed by cheese.
- Assemble: Remove 1/2 cup of the masa batter and stir it into the filling then transfer the filling into prepared pan and spread into an even layer. Transfer the remaining masa batter to the 9x13 and evenly spread over the filling. Bake for 30-40 minutes. Note that the topping may not look cooked so make sure to check it anyway with a toothpick; tamale pie is done when a toothpick inserted into the center of the masa topping comes out clean. Serve warm with sour cream, salsa, hot sauce, tomatoes, avocados, etc.

- Place a medium (10-inch) cast iron skillet over medium heat. Add the ground beef and break into small pieces with a wooden spoon. Brown the meat, about 10 minutes; then push it to the side of the skillet and add the chopped onion and salt. Cook until the onions have softened, stirring occasionally, about 4 minutes. Add the chile powder, cumin, coriander, green chiles, enchilada sauce and cheese. Stir well and turn off the heat. Set aside.
- In a medium bowl, combine the masa harina flour, baking powder and salt. Stir, then mix in the chicken broth and melted butter until smooth and lump free. Fold in the cheese.
- Scoop the thick masa batter over the beef mixture and spread all the way to the edges of the pan. Bake for 40 minutes, until a toothpick inserted into the center of the cornbread topping comes out clean. Scoop and serve hot.
