THE BEST SLOW COOKER BAKED BEANS (DAD'S RECIPE)
This recipe was handed down from my dad. I adjusted it to go into the slow cooker. It's a lot easier. Just set it and forget it.

Steps:
- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and transfer beans to a pot; add enough water to cover beans.
- Bring water to a boil, reduce heat, cover pot, and simmer until beans are slightly tender, about 1 hour.
- Mix 4 cups water, molasses, brown sugar, salt, mustard, and pepper together in a bowl until smooth.
- Mix beans, salt pork, and onion together in a slow cooker. Add molasses mixture and more water to cover beans if needed; stir well.
- Cook on Low for 8 to 10 hours.

DAD'S BAKED BEANS
This is my husband's own recipe for doctoring up baked beans. It's got a wonderful flavor.

- 1. Cook bacon half way through; add onion and 2 tablespoons of the brown sugar and the chili powder. Add the bacon and onion mixture to the baked beans and heat until bubbly. Add the coffee and remaining brown sugar.

- In a large bowl, combine the first 7 ingredients. Stir in half the onions and bacon. Transfer to a greased 13x9-in. baking dish., Cover and bake at 350° for 45 minutes. Sprinkle with remaining onions and bacon. Bake, uncovered, 5-10 minutes longer or until bubbly.

DAD'S HOMEMADE BAKED BEANS
This is my dads recipe for Boston Baked Beans. They are sweet and a little tangy what beans should taste like to me. The end result can be a little juicy, if you like your beans thicker, by all means just cook them to the consistency that you prefer. Also, the mustard and ketchup are not set in stone, they are simply one part mustard to three parts ketchup.

Steps:
- Put your beans in a baking dish to soak overnight with the water and the onion.
- The next day boil your beans in the soaking water until the crack when pushed between two spoons.
- Preheat your oven to 350 degrees Celsius.
- Mix together the mustard, ketchup, molasses and brown sugar and add to the boiling water. You can add your salt and pepper here to.
- Cut your salt pork, or any other pork product you would like to use and add this to the mixture as well.
- Put in oven and check after an hour and a half for moisture levels. If you feel it needs more water add about 1/4 cup at a time.
- Remove from oven after another hour and a half cooking time and check the constancy, It should be juicy but not watery.

- In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

DAD'S OVEN BAKED RIBS
These are the ribs that my Dad has cooked for years. My friends used to make sure they came around whenever they heard that he was going to be baking some and as a result he usually made several batches at a time. I recently ran into some old buddies and they asked for the recipe so I thought I would post it here. These ribs are messy, sticky and the meat falls off the bone. I wouldn't want them any other way.

Steps:
- Cut 4 lbs of pork back ribs into serving size pieces.
- Simmer the ribs, covered, in enough water to cover for about 1 hour or until nearly tender.
- About 10-20 minutes or so before the ribs are done simmering melt the butter in a sauce pan; add crushed garlic and cook 4 to 5 minutes.
- Add the rest of the ingredients to the sauce pan and bring to boiling.
- Drain ribs and place in a shallow baking pan.
- Pour boiling sauce over the ribs.
- Bake at 350 F degrees for 20 minutes, basting often with the sauce.

- soak beans overnight, drain.
- add beans to large pot, cover w/water, bring to boil, lower to simmer for 1 hour preheat oven to 300.
- in ovenproof dish mix next 7 ingredients.
- saute bacon until semi cooked, add to dish.
- add onions, beans, mix and bake 2 hours, covered.
- add rum and bake uncovered 1 hour.
