SPINACH-STUFFED CHICKEN PARMESAN

- Preheat oven to 375°. In a large skillet, cook and stir spinach and garlic in oil just until wilted. Drain. Stir in 1 tablespoon Parmesan cheese, salt and pepper., Pound chicken breasts with a meat mallet to 1/4-in. thickness. Spread each with 1 tablespoon spinach mixture. Fold chicken in half, enclosing filling; secure with toothpicks., Place bread crumbs and egg in separate shallow bowls. Dip chicken in egg, then roll in crumbs to coat. Place seam side down in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, 20 minutes., Meanwhile, in a large bowl, combine tomato sauce, basil and oregano. Pour over chicken. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Bake, uncovered, 10-15 minutes longer or until a thermometer reads 165°. Discard toothpicks before serving.

Steps:
- Season chicken with salt.
- Cut a pocket into each chicken breast.
- Stuff the pockets evenly with the mozzarella cheese.
- Press the edges of the chicken together to seal the pocket.
- Separate the flour, eggs, and bread crumbs into 3 separate bowls.
- Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess.
- Dip the floured chicken into the egg, then the bread crumbs, coating it evenly.
- Heat the oil in a large pan over medium heat. Preheat oven to 180°C.
- Fry the chicken until golden brown on both sides.
- Place ⅔ of the tomato sauce evenly on the bottom of a baking dish. Place the chicken on top.
- Top with the rest of the tomato sauce, then sprinkle the parmesan and basil on top.
- Bake for 20 minutes.

Not another ordinary Chicken Parmesan recipe here. This is a cross between stuffed chicken breast and Chicken Parmesan. The super creamy stuffing is spinach mixed with cream cheese, mozzarella cheese, and Parmesan. Once baked, the cracker and cheese coating is crunchy without the mess of frying. - 1. Heat oven to 375ºF.
- 2. Mix cream cheese, spinach, mozzarella, and Parmesan until well blended.
- 3. Spread onto chicken breasts. Starting at one short end of each breast, roll up the chicken tightly. Secure with wooden toothpicks, if desired.
- 4. Beat egg in a shallow dish. Mix remaining Parmesan and cracker crumbs in a separate shallow dish.
- 5. Dip chicken in egg, then roll in crumb mixture to evenly coat.
- 6. Place, seam-sides down, in a 13x9-inch baking dish sprayed with cooking spray.
- 7. Bake 30 minutes or until chicken is done.
- 8. Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and mozzarella.

- Season chicken with salt and pepper.
- Stack the two cheeses and spinach on top of the ham and roll up tightly.
- Stuff the chicken with the roll and press the edges of the chicken together to create a seal.
- Place the flour, eggs, and bread crumbs into 3 separate bowls.
- Being careful to keep the chicken from opening, dip the stuffed chicken in the flour, shaking off the excess. Then dip the floured chicken into the egg, then breadcrumbs, then egg and breadcrumbs again. Coat evenly and shake off any excess breading.
- Heat oil in a cast iron pan over medium heat and preheat oven to 375ºF (190°C).

- Once the chicken is fried, place into a baking dish and bake for 20 minutes, or until the internal temperature of the chicken reaches a minimum of 165ºF (75ºC).

- Pre-heat oven to 350 degrees.
- Rough cut the spinach and put it in a medium sized pot with a cup of water. Put the stove on medium high and bring water to a boil. When the water begins to boil remove pot from stove and drain spinach.
- Slice scallions into tiny pieces. Then quarter the mushrooms. Add these to the spinach.
- When spinach has cooled add the shredded parmesan cheese, garlic powder and oregano. Stir these together.
- Butterfly the chicken and stuff the spinach and parmesan inside. Place in baking pan.
- Combine cream of chicken soup with milk and heat it up (you can use the same pot as you used for the stuffing) until the soup has thoroughly dissolved into the milk, then pour it over the stuffed chicken.
- Cover the pan with foil and bake at 350 degrees for 20 minutes or until done.

- Preheat oven to 425˚F with a rack in the center. In a mixing bowl, mash together cream cheese, mayo and garlic with a fork then stir in mozzarella, parmesan and chopped spinach leaves until combined.

- Cut pockets in the chicken breasts: Place a cutting board on the counter, making sure that it is steadily in place and doesn't slide around (if it is slipping, place a damp paper towel underneath).
