- Preheat oven to 350°F. In a mixing bowl, beat 1 cup sugar with eggs until fluffy. In a separate bowl, combine flour, baking powder and salt. Blend dry ingredients into the sugar mixture. Fold in dates and pecans. Spoon batter into a greased 8-inch square pan; bake for 30 minutes. Remove from oven and stir immediately with a wooden spoon. Let cool completely, then roll mixture into 1-inch balls and toss in 1/4 cup sugar.
DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Mix the butter, brown sugar and granulated sugar in a large bowl with an electric mixer on medium speed until creamy. Turn the mixer to low, add the egg and mix well to combine. Add the oats, flour and cinnamon and mix on low until combined. Fold in the dates and walnuts with a wooden spoon or rubber spatula. Cover the bowl and refrigerate for at least 1 hour and up to 2 days.
- When you're ready to bake, preheat the oven to 350 degrees F; line a baking sheet with parchment.
- Scoop mounds of dough with a cookie scoop (about 1 1/2 tablespoons per cookie) and place on the prepared baking sheet, leaving about 2 inches between cookies.
- Bake on the middle rack until golden around the edges, 10 to 12 minutes. Cool the cookies on the baking sheet for about 10 minutes, then transfer to a cooling rack. Repeat with the remaining dough.

Steps:
- Melt butter and sugar carefully.
- Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
- Add milk and salt into well beaten eggs and stir into hot date mixture.
- Boil mixture 2 minutes.
- Add vanilla and nuts.
- Let cool, then add Rice Crispies and stir.
- Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.

- Make sure the dates and pecans are chopped very fine - I recommend using a food processor. Do not use the pre-chopped dates with the coating on them that prevents them from being sticky, or your balls won't stick together.
