DEATH BY CARAMEL BARS

These showy brownies are nice and tall with pockets of caramel goo. They are wicked enough on their own, but for an over-the-top dessert, add a scoop of vanilla ice cream and drizzle with caramel sauce.

Steps:

  • Combine first 4 ingredients in a large bowl; stir well.
  • Combine flour, oats, baking powder, baking soda, and salt.
  • Add to butter mixture, stirring just until blended.
  • Fold in chopped candy bars.
  • Spoon batter into a greased aluminum foil-lined 13" x 9" pan coated with cooking spray, allowing foil to extend over ends of pan (Pan will be very full).
  • Spoon dollops of dulce de leche over batter; swirl slightly into batter with a knife.
  • Bake at 325° for 1 hour and 5 minutes.
  • Remove to a wire rack, and cool completely (This may take several hours).
  • Use foil to lift uncut brownies out of pan.
  • Peel foil away from sides of uncut brownies, and cut into bars.

Steps:

  • Combine cake mix, oil and eggs.
  • Mix well.
  • Pat 2/3 of the mixture in bottom of greased 13 x 9 baking pan.
  • In microwave safe bowl combine margarine, sweetened condensed milk and chocolate/caramel chips.
  • Melt until creamy.
  • Pour over top of cake mixture.
  • Sprinkle remaining cake mixture over top.
  • Bake at 350 degrees for 20-25 minutes or until brown.
  • Chill 2 hours and then cut into bars.

Steps:

  • To Make Filling: Pour the condensed milk into a heavy saucepan. Cook over medium heat until hot. Stirring constantly, lower the heat to low and continue to cook the milk takes on a golden color, about 20-25 minutes. Remove from heat and add vanilla. Transfer to a bowl and cover directly with plastic wrap. Set aside and let cool to room temperature.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the flour, 3 tablespoons confectioners' sugar, and the salt in a bowl. Cut in the shortening and the butter until crumbly. Beat in the yolk and the cream. Mix to form a dough, adding more cream if necessary.
  • Roll dough on a floured counter to 1/8 inch thick. Cut into 2-1/2 inch rounds and place on ungreased sheets. Prick the top of the rounds a few times with a fork.
  • Bake for 12-15 minutes or until the edges are light brown. Cool on sheet 1 minute and remove to rack. Spread the filling on one half and sandwich with another round. Dust cookies with confectioners' sugar.
