CLASSIC PEAR CRISP

Pears and crystallized ginger are baked under a crispy golden oat crust.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
  • In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
  • In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
  • Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

Steps:

  • Preheat oven to 350 degrees. Toss first six ingredients together in a bowl. Pour into a buttered baking dish. Using a fork combine the remaining six ingredients. Spoon topping across pears. Bake for 30 minutes or until brown and bubbly.

DECADENT TASTING GINGER PEAR OATMEAL

This was my decadent tasting gift to myself this morning (in an attempt to avoid all the baked goods that keep cropping up at work this holiday season). I modeled it on toni gifford's Ginger Peach Oatmeal #112474 which I love and eat often. But this is just enough different that I decided to post it so I'll remember. I loved it, but I love candied ginger. In fact, I may add more next time.

Steps:

  • Place the 1 cup water in a pan and bring it to a boil.
  • When it is boiling add the oatmeal and cook for 30 seconds to a minute. Then add the ginger and stir.
  • Wait a moment and add the canned pears and stir.
  • At this point the oatmeal should be done, but if you like it mushier feel free to let it cook longer.
  • Transfer the oatmeal and fruit to a bowl. Sprinkle the brown sugar substitute (or real brown sugar if you are so inclined) over the top. Then drizzle the half and half over the top.
  • Stir it all together and enjoy.

Low fat, not too sweet and the almonds give it a nice crunch. Try substituting dried blueberries, currants or raisins for the dried cranberries. You can also vary the nuts by substituting walnuts or pecans. This makes an excellent dessert when topped with vanilla pudding (or yoghurt) and sliced fresh fruit - I use strawberries. This baked oatmeal can be divided into squares for reheating later with a little more added milk.

  • Spray baking dish with non stick spray.
  • Mix all ingredients together in baking dish.
  • Cover and bake at 400 for 45 minutes.

2 cups oatmeal
2 cups 1% low-fat milk

1 apple, grated (I use Granny Smith)

The original recipe did not specify what size or shape baking dish to use so I have made changes below according to what I did when I tested it. It feels strange to leave a review on my own recipe (I don't usually post a recipe without having tried it first) but I want to be honest about this cake not really knocking our socks off. The actual making of the cake was very easy. I chose to use a 10 inch round springform pan hoping that it would be the best option for arranging the pears. I used 2 anjou pears & one from New Zealand, sliced into 3/4 inch slices, fresh ginger & it all baked up in 32 minutes. I thought the batter was thick & difficult to spread over the pear "star" without disturbing the arrangement so either double the batter or a smaller pan, maybe a pie plate (using less pears) would allow for a thicker cake instead of "a little cake with my pears". I really loved the combination of chocolate & ginger but felt the pears were overwhelming and not quite as sweet as we would normally like. We ate it both warm & cold but we still weren't sold on the pears. I may try a raspberry version with the cake & if I do I'll post it. If you try this recipe, please feel free to offer any constructive criticism & if you find a baking dish or technique that works I'm open to editing this again (giving credit where credit is due, of course). Fondant Aux Poires Et Au Gingembre (Choc Ginger Pear Fudge Cake) image

Steps:

  • Preheat oven to 350°.
  • Butter baking dish (I used a 10-inch springform pan).
  • Peel pears. Cut into thick slices. Place slices, going from center to the edges, on bottom of baking dish. It should look like a multi-tipped star.
  • Combine the flour, yeast, ginger & cocoa powder. Stir.
  • In another bowl, mix the butter & sugar until smooth.
  • Stir in both eggs, one at a time then slowly add flour mixture. Stir to combine.
  • Pour batter into baking dish over pears.
  • Bake for 30 minutes or until the blade of a knife inserted in the center of the fondant comes out clean.
  • Turn off the oven but leave fondant inside, with oven door open, for 10 minutes.
  • Sprinkle with powdered sugar & serve slightly warm or cold.
