SKILLET BEEF AND CELERY
A quick and easy family favorite for over 30 years in our family. Even the kids enjoy this one !! Serve over hot, fluffy rice.

Steps:
- In a large skillet, heat 2 tablespoons of oil over medium heat. Slowly cook and stir onions and celery until golden brown; remove from heat and set aside.
- In the same skillet, heat the remaining 2 tablespoons of oil. Place beef slices in the skillet and heat until well browned. Stir in salt, pepper, soy sauce and water.
- Cover and simmer for 30 to 40 minutes. Return the onion and celery mixture to the skillet and simmer for another 10 minutes.
- In a small bowl, combine the water and cornstarch. Pour the mixture into skillet. Stirring constantly, heat until thickened.

STIR-FRIED BEEF WITH CELERY
I love beef with celery and this sounds like a nice version. From Betty Crocker Chinese. Prep time includes marinating time.

Steps:
- Trim fat from beef; cut beef with grain into 2-inch strips.
- Cut strips across grain into 1/8-inch slices.
- Toss beef, 1 tablespoon vegetable oil, 1 teaspoon cornstarch, 1 teaspoon salt, the sugar, 1 teaspoon soy sauce and the white pepper in glass or plastic bowl.
- Cover and refrigerate 30 minutes.
- Cut celery diagonally into 1/4-inch slices.
- Cut green onions into 2-inch pieces.
- Mix 1 tablespoon cornstarch and the water.
- Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled in wok.
- Add 3 tablespoons vegetable oil; rotate wok to coat side.
- Add beef, gingerroot and garlic; stir-fry until beef is brown, about 3 minutes.
- Remove beef from wok.
- Add 3 tablespoons vegetable oil to wok; rotate.
- Add celery; stir-fry 1 minute.
- Stir in chicken broth and 1/2 teaspoon salt; heat to boiling.
- Cover and cook 2 minutes.
- Stir in cornstarch mixture; cook and stir until thickened, about 10 seconds.
- Stir in beef and 2 tablespoons soy sauce; heat to boiling.
- Garnish with green onions.

DEEP-FRIED BEEF LIVER CUBES

- 1. Cut beef liver in 1/2-inch slices, then in 1/2-inch cubes. Cut celery in 1/2-inch sections and blanch. Slice onion. 2. Mince ginger root and combine with the soy sauce, sherry and salt. Add liver cubes and toss gently. Let stand 15 to 20 minutes, turning occasionally. 3. Drain well, discarding marinade. Dredge liver in flour to coat lightly. Meanwhile, heat oil. 4. Place liver in a wire basket or strainer. Immerse in oil until liver is light brown. Drain on paper toweling. 5. Heat remaining oil. Add sliced onion and celery. Stir-fry to soften slightly. DEEP-FRIED BEEF SLIVERS WITH CELERY

- 1. Cut beef against the grain in thin slices, then sliver. Shred celery and onion. Cut scallion in 1/2-inch sections. Mince ginger root. 2. Mix cornstarch and egg white to make a batter. Add beef slivers and toss gently to coat. Meanwhile, heat oil. 3. In one cup, combine soy sauce, sherry, sugar and salt. In another, blend remaining cornstarch and cold water to a paste. 4. Place beef slivers in a wire basket. Immerse in oil until meat begins to turn golden (less than a minute). Drain on paper toweling. 5. Heat remaining oil. Add celery, onion, scallion and ginger root. Stir-fry until slightly softened (about 1 minute). 6. Stir in beef, then add soy-sherry mixture. Stir-fry only to heat through. 7. Stir in cornstarch paste to thicken. Serve at once. - Cut liver into strips, 2-1/2 x 1/2 inch, and put into a bowl sprinkle with salt, oregano, and pepper. Add olive oil and lemon juice. Stir to coat liver. Turn steak over and add sliced celery and scallions. Cook, tossing often, until celery is slightly tender but still has some good crunch and scallions are lightly charred, about 2 minutes.
- Remove skillet from heat and add soy sauce, vinegar, butter, and 3 Tbsp. water. Toss, until butter is melted and sauce coats steak (still off heat). Add celery leaves and toss until slightly wilted. Season with more salt if needed.
