DEER-POTATO-TOMATO CASSEROLE
After receiving several packages of fresh ground venison from a friend, I was asked to find some good recipes to use it up. This delicious casserole fit the bill exactly. Even my little sister, who hates tomatoes, any ground meat, and cheese, loves it. I use canned tomatoes. The preparation time is for cutting the potatoes and, if using fresh, tomatoes. The cooking time includes the browning of the venison.

Steps:
- Cook deer burger, onion, basil, salt and pepper together until deer is done and lost its color.
- Meanwhile, parboil potatoes until just tender.
- Put deer burger in a deep 7 1/2 x 7 1/2-inch casserole and stir in potatoes and tomatoes (if canned tomatoes are used, do not drain).
- Bake, uncovered, in a 350 degree oven for 30 minutes.
- Top with cheese and bake 15 minutes longer.
HUNTERS VENISON POTATO CASSEROLE
You can substitute any ground meat for the venison with the same great results

- 1. Make the mashed potatoes or use leftovers. Spray a large casserole dish with cooking spray. Place the mashed potatoes in the bottom of the casserole dish.
- 2. Cook the bacon and drain. Cut into pieces set aside. Place canola oil in a large skillet. Place the ground venison in skillet and break it up. Add the red onion, garlic, and red bell pepper. Cook until meat is browned and vegetables are tender. Season with salt and pepper.
- 3. Spoon the meat mixture on top of the potato mixture. Mix the eggs and cottage cheese together. Place on top of the meat in the casserole dish.
- 4. Top with cheese. Top the cheese with the cooked bacon. Place in a preheated 350 degree oven. Bake 20 to 25 minutes.
HUNTER'S VENISON CASSEROLE
This delicious, one-dish meal was designed to be most flavorful when made with ground venison, but it's also fabulous when made with other big game or even ground beef.

- Preheat oven to 350 degrees F (175 degrees C).
- Spread mashed potatoes evenly in a 2-quart casserole dish; set aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, set aside.
- Heat the canola oil in the skillet, then stir in the red onion, garlic, celery, and red bell pepper. Cook until the onion has softened, about 3 minutes. Stir in cooked venison, and season with Worcestershire, salt, and pepper. Spoon mixture onto potatoes in the casserole dish.
- Stir together eggs and cottage cheese in a small bowl; spread evenly over meat mixture. Top with tomato slices, and sprinkle with cheese.
- Bake, uncovered, in preheated oven until set, about 20 minutes.

VENISON ( OR GROUND BEEF) & POTATO CASSEROLE
This is a great comfort food. I use ground venison but you could use any ground meat. It melts in your mouth and is a fix it and forget it kind of recipe. You can do it in the crockpot or throw it in a 350°F oven for an hour or so and call it done. I got this recipe from the recipe book that came with one of my crock pots. Use whatever vegetables you like or just use the leftovers from the past few days, that's what I usually do.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes. Drain and reserve pasta.
- Meanwhile, place the olive oil into a skillet set over medium-high heat. Stir in the onion, and cook until soft and translucent, about 5 minutes. Add the venison and cook until crumbled and no longer pink, about 10 minutes. Drain, if necessary. Stir in the tomato sauce, basil, and garlic powder. Season to taste with salt and pepper, and turn off the heat.
- Assemble the casserole by spooning a layer of the venison sauce over the bottom of the prepared baking dish. Sprinkle the sauce with Parmesan cheese, and layer with cooked pasta. Top with the sauce, layer with pasta, and half of the Mozzarella. Repeat the layers to use the remaining ingredients, ending with a layer of Mozzarella cheese. Cover the dish with aluminum foil.
- Bake in preheated oven for 20 minutes. Remove the foil cover and bake until the cheese topping is light gold, about 10 minutes more.

- Heat the oil in a frying pan, and add the grated carrot and diced onion. Cook over a medium heat for around 5 minutes, until fairly soft. Add the minced garlic, smoked paprika and dried herbs, and cook for 2 more minutes.
- Next, add the tomato sauce, tomato puree and about two thirds of the cherry tomatoes (save some back for topping), along with a good pinch of salt and pepper. Bring to a gentle simmer, and cook for a few minutes.
- Thinly slice the potatoes - I didn't bother peeling mine. If you're not planning to pre-boil the potatoes, make sure you don't cut them any thicker than a few millimetres. Or, if you want to cut them a bit thicker or you're pushed for time, pre-boil them until they're just tender.
- Add one spoonful of sauce to the bottom of a baking dish (mine measured 8 x 8 inches), and spread it around - this just stops the potatoes from sticking to the bottom of the dish. If you have a dish with a lid, that's ideal.
