BETTER-FOR-YOU BANANAS FOSTER

You only need a handful ingredients to transform ripe bananas into this elegant, warm dessert.

Better-for-You Bananas Foster image

Steps:

  • Remove 4 strips orange zest with a vegetable peeler. Squeeze the orange and strain the juice.
  • Melt the butter with the sugar, orange zest and vanilla bean paste in a large skillet over medium heat. Cook, stirring, until the sugar caramelizes, about 5 minutes. Remove from the heat and stir in the liqueur, orange juice and a pinch of salt.
  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Bring the liquid to a boil without stirring, then reduce the heat to a simmer. Cook until the sauce thickens slightly, about 4 minutes. Spoon the sauce over the bananas. Garnish with whipped cream if using and the glazed orange zest.

2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 teaspoon vanilla bean paste
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving (optional)

Bananas Foster a la Mode image

Steps:

  • Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).

38 ounces creme de banana
38 ounces butterscotch liquor
38 ounces vanilla vodka (recommended: Stoli)
20 ounces creme de coca
52 ounces spiced dark rum (recommended: Captain Morgan)
3/4 gallon heavy cream
1/4 gallon sweet condensed milk
50 edible orchids, cut in 1/2
100 banana slices
Splash 151 to light on fire for flambe

Easy Bananas Foster a La Mode image

Steps:

  • Peel Bananas and place in a non-stick skillet. Pour syrup over the bananas and bring to a simmer.
  • Continue to cook bananas, spooning syrup over the top for 3 minutes.
  • Turn off heat and cover to keep warm.
  • Spoon frozen yogurt into four dishes or bowls. Gently place a warm banana on top of the frozen dessert, spooning the syrup on top.
  • Garnish with whipped topping and serve to four very happy people.

Steps:

  • In a large skillet or flambé pan, melt butter over medium-low heat. Stir in brown sugar and cinnamon until combined. Cut each banana lengthwise and then widthwise into quarters; add to butter mixture. Cook, stirring gently, for 3-5 minutes or until glazed and slightly softened. Stir in creme de cacao; heat through., In a small saucepan, heat rum over low heat until vapors form on surface. Carefully ignite rum and slowly pour over bananas, coating evenly. , Leaving skillet or pan on the cooking surface, gently shake pan back and forth until flames are completely extinguished; serve over ice cream.
